I’ve had this recipe on my to “make list” for a long time now, but never got around to it. It’s seriously one of the easiest desserts I have ever made. If your looking to please a crowd this is the recipe for you.Easy Chocolate Vanilla Ice Cream Cake (with ice cream sandwiches) This cake only uses 4 simple ingredients and to my guess, you might already have them in your freezer. Your going to need a tube of cool whip, ice-cream sandwiches, Jello chocolate pudding and fudge topping.

What makes this cake super easy to make is the cool whip and chocolate pudding mixture, but the real secret to making this cake is this easy ice cream cake is the ice cream sandwiches. They basically do most of the work for you because they are already pre-layered. All you need to do is make the chocolate layer and assemble.

I made a very basic chocolate vanilla ice cream cake but this cake can be customized in sooo many ways. You can throw in some crushed Oroes, chocolate chip cookies, or candy into the chocolate mixture and top it off with your favorite toppings. Easy Chocolate Vanilla Ice Cream Cake (with ice cream sandwiches)

I used the bigger cool whip and also used 16 sandwich cookies because I made a large cake. This recipe is perfect for 3 layers, 4 sandwiches in each layer. Recipe adapted from Kraft.

Ingredients 

  • 1/2 cup hot fudge ice cream topping, warmed
  • 1 tub, 8 oz. COOL WHIP Whipped Topping, thawed, divided
  • 1 pkg., 3.9 oz. JELL-O Chocolate Instant Pudding
  • 12 vanilla ice cream sandwiches

Instructions 

  • Combine fudge topping and 1 cup Cool Whip in medium bowl until blended. Add dry pudding mix; stir for 1 minute or until fully combined and the mixture is slightly thick and creamy.

  • Arrange 4 ice cream sandwiches, side-by-side, cover with half the Cool Whip mixture. Repeat layers. Top with remaining sandwiches. Frost with remaining Cool Whip. Freeze for at least 2-3 hours before cutting ( I cut mine too soon!). .

  1. I love this, except I used a small carton of candy ice cream mixed with cool whip. First ,the sandwiches, then the fudge sauce, followed by the cool whip mix, and iced with cool whip, and drizzled the remaining fudge sauce. The sky’s the limit!
