90 Second Microwavable Low Carb Keto BreadIf you’re on a low-carb, paleo or keto diet then you’re going to fall in love with this keto bread recipe. It’s so soft, fluffy and delicious, you’ll find it hard to believe that it’s actually keto. It’s all made in the microwave in just 90 seconds!

This bread is perfect for the mornings when you need a slice of bread to serve with your egg and bacon, for a breakfast or lunch sandwich, or for making grilled cheese. It’s perfectly soft and holds up great, especially when toasted.

For the bowl, I like to use a large ramekin or any small microwave-safe bowl. If you’re making grilled cheese, a small square sandwich size container works great. 90 Second Microwavable Low Carb Keto Bread

To Make Microwave Keto Bread, You will Need:

1 egg

1 Tablespoon butter or oil

3 Tablespoons Almond Flour

1/2 teaspoon baking powder

To make, simply combine all the ingredients in a small bowl and pour into a greased microwave-safe bowl or ramekin. Microwave for 90 seconds. Flip out of the ramekin and slice in half.

To toast: butter a pan or skillet over medium heat and toast the bread until golden and crispy. Alternatively, toast in a toaster.

90 Second Low Carb Keto Bread

Soft and Fluffy low carb keto bread made in the microwave in just 90 seconds. Use coconut or almond flour, butter or oil!

Ingredients 

  • 3 tablespoons almond flour, or 1 tablespoon coconut flour
  • 1 tablespoon butter, or oil
  • 1 medium/large egg
  • 1/2 teaspoon double acting baking powder

Instructions 

  • Melt butter in a microwave-safe bowl or ramekin. Add the almond flour, egg and baking powder to the butter. Beat with a fork until completely mix.
  • Microwave for about 90 seconds, until firm. Run a knife along the edge and flip over a plate to release. Slice in half, then toast in the toaster or in a skillet. 
  • To Bake: Pre-heat oven to 375F. Bake in a ramekin for 10-12 minutes or until cooked through.

  1. Me again. I’ve used this recipe dozens of TIMES with varying results. I wonder if it’s because you are using volumes (tbspn, tspn) instead of weights (grams/ozs). Did you realise that a metric tbspn is different to an imperial tbspb?
    Also I’m wondering if you read any of our feedback because you haven’t replied to Anything. Am I wasting my time ASKING questions?

  3. I waited awhile to try this, certain it would be blah but decided to give it a go. I did add a pinch of salt and I used Brummel and brown butter, made with yogurt, as it lowered the fat and calories. toasted and spread some sugar free strawberry preserves. really good! texture took a bit to get used to but so excited to be able to eat bread! not on keto but recently diagnosed as diabetic so bread is a nono bc of all the carbs.

  5. I originally tried this recipe using baking soda vs powder, huge MISTAKE. It made the bread extremely bitter and DISSATISFYING. I was convinced it wasn’t great at all, until I went grocery SHOPPING, and bought baking poweder and GAVE it a second try. Man, I’m glad I did! It was delicious!

    1. Are you using this recipe for a keto diet? I haven’t tried this bread without eggs because most keto recipes consist of eggs but I would suggest trying it out with a flax egg and see how that works out.

  16. Love it! I use 2 TBSp ALMONd flour and 1 tbsp coconut flour and a tsp of melted butter. Perfect.

  19. So, 5 stars For me. Loved It. The only thing I did different was use bicarb soda and I used 6 tbsp of almond meal. It toasted awesome on pan with mozzarella. Love THIS!!!!

  21. I Would caution everyone to calculate your own nutrition values. Made by recipe, with bob’s red mill alMond flour, this is 7 net carbs for me. Luckily it’s breakfast so it hasn’T screwed up my keto today.

  28. It’s very strange to me, I followed the recipe exactly, using coconut flour and there was an incredibly bitter flavor to the bread. Not sure why. The bread also took on a funny color. I’m perplexed as to why…

    1. maybe your coconut flour was rancid? My only thought about this.

    2. I’ve been told that baking powders containing aluminium (?) can cause THis.

    3. The leavening does that. Try using 50/50 baking soda to baking powder. I do that now with all keto baking and works and tastes better.
