Instructions 

  • Heat 2 tablespoons olive oil in a large saucepan over medium-high heat. Add the chopped chicken breasts, season with Italian seasoning, crushed red pepper, and salt & pepper. Sautee for 4-5 minutes or until chicken is golden and cooked through. 
  • Add the garlic and saute for another minute or until fragrant. Add the tomato, broccoli, spinach, shredded cheese, and cream cheese. Cook for another 3-4 minutes or until the broccoli is cooked through.
  • Serve with cooked pasta, rice, zucchini noodles or cauliflower rice

  4. How would this taste if the cream cheese was low-fat. How would it change the nutritional value of the recipe

    1. If you are doing keto I would stick with full-fat cream cheese. As for the taste, it won’t change it significantly and for the nutrition, the only substantial difference would be the calories. Unfortunately, I don’t have the exact count for low-fat cream cheese.

    1. 2 C broccoli is about 150 grams by weight and 2 cups of spinach is about 70 grams. Hope this helps.

    1. Although I have not tried this recipe with an alternative, the only thing I can think of would be coconut cream or non-dairy cream cheese.

  9. I made this tonight but dOubled it. It was super good and flavorful! Next time i would still double the recipe but wouldnt doUble the cream cheese. It Came out very cream cheesy. So if doubling, i’d Do maybe 6 oz of cream cheEse rather than 8.

  13. Made this last night. It was excellent. only issue i had was using frozen brocolli. i steamed the brocolli however i left it pretty crunchy and so produced alot of liquid during the cooking process. i keep adding extra cheese to thicken it though. i also added 1/2 diced zuchiinni.
