90 Second Microwavable Low Carb Keto BreadIf you’re on a low-carb, paleo or keto diet then you’re going to fall in love with this keto bread recipe. It’s so soft, fluffy and delicious, you’ll find it hard to believe that it’s actually keto. It’s all made in the microwave in just 90 seconds!

This bread is perfect for the mornings when you need a slice of bread to serve with your egg and bacon, for a breakfast or lunch sandwich, or for making grilled cheese. It’s perfectly soft and holds up great, especially when toasted.

For the bowl, I like to use a large ramekin or any small microwave-safe bowl. If you’re making grilled cheese, a small square sandwich size container works great. 90 Second Microwavable Low Carb Keto Bread

To Make Microwave Keto Bread, You will Need:

1 egg

1 Tablespoon butter or oil

3 Tablespoons Almond Flour

1/2 teaspoon baking powder

To make, simply combine all the ingredients in a small bowl and pour into a greased microwave-safe bowl or ramekin. Microwave for 90 seconds. Flip out of the ramekin and slice in half.

To toast: butter a pan or skillet over medium heat and toast the bread until golden and crispy. Alternatively, toast in a toaster.

90 Second Low Carb Keto Bread

Soft and Fluffy low carb keto bread made in the microwave in just 90 seconds. Use coconut or almond flour, butter or oil!

Ingredients 

  • 3 tablespoons almond flour, or 1 tablespoon coconut flour
  • 1 tablespoon butter, or oil
  • 1 medium/large egg
  • 1/2 teaspoon double acting baking powder

Instructions 

  • Melt butter in a microwave-safe bowl or ramekin. Add the almond flour, egg and baking powder to the butter. Beat with a fork until completely mix.
  • Microwave for about 90 seconds, until firm. Run a knife along the edge and flip over a plate to release. Slice in half, then toast in the toaster or in a skillet. 
  • To Bake: Pre-heat oven to 375F. Bake in a ramekin for 10-12 minutes or until cooked through.

  1. When I make my grandkids traditional French toast or pancakes, I make this 90 second bread for myself and add a pinch of salt, cinnamon, and vanilla. Cook, put on a plate, pour some sugarfree maple syrup. I don’t feel I’m missing out.

  2. I added 1/4 cup Parmesan, based on another recipe. This was really good!
    I used a 5 inch casserole, making it pretty thin, but closer to the size of sandwich bread. I’m using it tonight to have an actual sandwich for supper!

  4. Thank you I used a silicone ramekin and it came out perfect and didn’t need the knife it just fell out. I’m wondering if I could add a tablespoon of cottage cheese. I whipped it up in a mini cuisanart also little hard to get it out of there. Next time I
    Doubling the recipe to make extra. It’s so simple also very filling with an egg!

  5. I made this recipe once before- both in the oven and microwave and it turned out great. The second time I made it I accidentally used baking soda instead of powder… the bottoms of them came out green with a strange scent. I don’t want to waste them but a little nervous if it’s safe to eat, if I made some sort of strange chemical reaction.. I also added salt, garlic powder and onion powder. Thoughts?

    1. I would toss it out and start over as the baking soda is very strong.

  7. Best (and quickest) version of keto bread I’ve ever made! I tried with both almond and coconut flour and there are negatives and positives to both. While coconut flour version gave me the egg smell, it tasted lighter. And I wasn’t able to taste the egg despite the smell. Almond flour version had more of a savory taste but felt heavier. But both of them were easy to make and the consistency was fantastic.

I also eat Gluten Free and it is difficult to find recipes that are both Keto and GF. We love your Banana Bread recipe so now I am going to try the Almond Flour Banana Bread recipe too!   9. Mine came out slightly soupy on top and very soupy on the bottom. Used Costco almond flour, olive oil and large eggs. I kept adding heat in 30-second increments after the first 90, still no luck.

  10. Mine was a flop. I used Bob’s Red Mill almond flour from whole almonds, olive oil and baking powder. Microwaved 90’ then 60’ more still crumbly. Is it the whole almond super fine flour?

      Did you use an egg? If so, perhaps you need a larger or smaller egg. If not, you need an egg.
