Healthy Avocado Chicken Salad

Ever since I tried avocado in a grilled chicken sandwich, I can no longer have chicken without avocado. The creamy avocado compliments chicken so well and the addition of cilantro and lime make it a combo to die for. This creamy salad is great in sandwiches, wraps, or with a side of vegetables if you are on a diet.

Healthy Avocado Chicken Salad

I’ve added this salad to my healthy lunch rotation because the rotisserie chicken breasts are lean and a great source of protein, the avocado is packed full of nutrition and because no mayo or cream is added, you can enjoy the salad guilt-free.

Making this fresh and flavorful salad is as simple as combining avocado, shredded chicken, roasted corn and red onion. You can also add minced green onion, tomatoes, cucumber, or diced bacon. For the herbs, we used cilantro but dill or parsley also work very well too!

Avocado Chicken Salad

Ingredients 

  • 2 medium cooked chicken breasts, shredded or chopped (we used rotisserie chicken)
  • 2 ripe avocados, pitted and diced
  • 1/2 cup corn, roasted, canned, or frozen
  • 1/4 cup red or green onion, minced
  • 2 tablespoons cilantro, minced (or parsley or dill)
  • 2 tablespoons lime, or lemon juice
  • 2 tablespoons olive oil
  • salt and pepper to taste

Instructions 

  • In a large bowl, add the shredded chicken, avocado, onion, avocados, corn, and cilantro.

  • Drizzle with the lime (or lemon) juice, olive oil and season with salt and pepper. Toss gently until all the Ingredients are combined.

  2. Really great recipe. I’m a huge fan of chicken and avocado so this stills my cravings in a healthy and nutricious way. I changed the dressing to add a little more zing because I’m not fan of lemon or lime in a salad dressing. For anyone who’s curious: I mixed olive oil with balsalmic vinegar, half a small packet of dill herbal mixture and a teaspoon of mustard. I also added this thing called Maggi which I’m not sure if you can get everywhere. Just a few drops go a long way. It made it a little more tasty and added a European touch. Five stars! Will definitely be eating this a lot.

  5. I do weekly meal prep for lunches. Is this something I can make on the weekend and use for lunch throughout the week or does it have to be made fresh daily?

    1. Because avocado tends to brown, I suggest making this salad as needed or cover tightly with plastic wrap for up to 2 days in the fridge.

  7. Made it & it was aWFUL. It was so dull, added extra lemon to let that flavor out, but blah. I like all the ingredients, but not the flavor. Served it to a party of 4 & no one liked it.

    1. sorry about the caps in advance. it’s not me, it won’t let me turn them off. anyways, try and make a different dressing. i suggest mixing olive oil with balsamic vinegar and bring out a little taste with a dill herb mixture you can buy in any grocery store. add a little mustard for even more taste. it’s a french dressing and it’s divine with this salad.

    1. I haven’t tried freezing this salad and I don’t recommend freezing it because the avocado will brown and dry up. Please do let us know if you try it!
