Instructions 

To Cook Chicken

  • Add the chicken, garlic, olive oil, and spices in a large bowl or zip-seal bag. Place in fridge and let marinate for at least 15-30 minutes or up to 24 hours.
    Remove chicken from marinade and discard marinade. Place chicken on a grill or pan heated to medium-high heat. Let chicken cook until it is no longer pink on the inside, about 9-10 minutes per side (or until it has reached an internal temperature of 165 degrees F). 

To Make Cilantro Sauce

  • Place all the ingredients in the food processor and blend for 1 minute or until creamy. 

To Assemble

  • Layer lettuce wraps with chicken, tomatoes, onion, and avocado. Drizzle with cilantro sauce or your favorite taco sauce.

  2. ThiS was so super DELICIOUS and i will defi be making it Again!!

    My only question Is how is each taco 6 Carbs?! Chicken 0 carbs, lettuce less than .5 carbs, one whole avocado is only 2-3 carbs and You probably only put 1/4 of an avocado on each taco, tomato would be less than 1 carb… is it the cilantro sauce? Please help!!!

    1. So happy you enjoyed the tacos, Liz! Here’s the info from the nutritional calculator:
      Taco seasoning 3g carbs (assuming you are using packet)
      Garlic 3g
      Romain lettuce 7g
      Avocado 17g
      Tomato 5g
      Onion 4g
      Greek yogurt 4g
      Jalapeno 1g

      If you add all the carbs and divide by 8 (tacos) it’s about 5.5 carbs a taco. There are hidden carbs in most veggies and even dairy products! 5.5 is not too bad when balanced by the fiber. Hope this helps! 🙂

      1. This was a hit with my whole family.

        Re the carbs: I subbed in sour cream for greek yoghurt (which is generally lower in carbs that I’ve found) and left out the tomatoes to reduce the carb content further if you need and it still tastes great. You can also add a small sprinkle of cheese to mix it up some days.

  3. I made This recipe for My FAMILY tonight, aND I Thought everything tasted wonderful. However, I would try the sauce with a little Less lime 1/2 tsp, a little less cilantro, say a 1/3 cup,and mixed with mayo Or sour cream. The sauce was really bitter, like vinegar, and I had to doctor it up with a little sweetener. Other than that, I fixed asparagus, zucchini, and squash. All sprinkled with salt, pepper, garlic powder, and parmesan cheese, and baked at 325 for 20 min. Delicious!

  4. Made this tonight. Just. wow! I made the cilantro sauce with greek yogurt – so easy and so delicious. My husband said he wanted to bathe it it. hahaha. Recipe was so simple, fresh, delicious and healthy. It will be a weekly staple in our house. Thank you so much for the recipe!

Tried out this recipe last night. my family loooooved it! they asked for it today! i didn’t marinate the chicken because i was short on time so i tossed chicken in taco seasoning and threw in skillet. i accidentally added a tomato into the cilantro sauce but didn’t realize until i re-looked at the recipe today. it turned out awesome with the tomato, now i know why it wasn’t creamy, lol! this recipe held so much flavor and we were left filling nice and full (in a good way). we will definitely be adding this recipe into our dinner rotation. Next time i will be following recipe as is. must try!

  7. I made these today,and they are delicious! I let the chicken marinate overnight, and then just cooked in a pan on the stovetop. The cilantro sauce is a keeper, but i found the recipe as listed here was very runny, so i thickened it with extra mayo, cilantro and jalapeno. I think the juice of one whole lime and 2 TB of olive oil with the other ratios was too liquidy. However, the flavor was amazing. instead of trying to do these in wraps, i just served over lettuce, like a salad, with tomato, avacado and some black olives. Yum!!
