What better way to start the morning then with this yummy cream cheese crumb cake. Instead of opting in for the usual omelet or cereal this morning, I decided to bake this cake at 7 am and by 9 am I enjoying this crumb cake with a hot cup of coffee. What I love about this recipe is that it’s fairly easy to make and bakes very well!

When you cut into it there’s a layer of cake, topped with a layer of cream cheese, and the crumb on top.

On a side note, in case you guys haven’t noticed, I have been a little busy with the website colors lately.. Okay, not just a little busy, I’ve change the site color like 4 times in the past week. I don’t know if I’m the only one that has experienced this but it’s kinda frustrating. Finally I am satisfied with this nice coral color (for now..).  Let’s hope it’s a keeper!

Cream Cheese Crumb Cake

Ingredients 

Instructions 

  • Pre-Heat oven to 350 degrees.
  • Crumb mixture
  • In a medium bowl mix the butter, flour, sugars, cinnamon, and salt. Crumb together with a flour until everything is well blended. Cover and leave in the fridge while you prepare the cake mixture.
  • Cream Cheese Mixture
  • beat the egg, cream cheese, vanilla, and sugar for about 3-5 minutes until there are not more lumps and the mixture is smooth.
  • Cake mixture
  • In a medium bowl mix the flour, salt, sugar, baking soda, and baking powder. Set aside.
  • In a large bowl whisk the butter, and eggs for 2 minutes. Whisk in the buttermilk, add the flour mixture slowly. mix for 2 minutes.
  • Pour the cake mixture into 9x9 or round pan. pour the cream cheese mixture on the cake mixture, gently spread the cream cheese mixture evenly. Pour the crumb mixture on top of the cream cheese mixture.
  • Bake at 350 for 40 minutes.

  1. If you use 1/3 cup sour cream for the cake, the batter is very thick, like pizza dough. It will not “pour” into the cake pan. The crumb recipe makes enough topping for a 9 x 13 pan. It is way too much to fit in a 9 inch round pan. The directions for the crumb mixture makes no sense at all. The vanilla is missing from the directions for the cake mixture although the vanilla is shown in the ingredients. I found the baking time to be 60 minutes and not 40 minutes unless you like your ingredients raw. I don’t think you can make a successful cake if you follow the directions as they are written.

  2. Bake on center rack ? And how to tell if it’s done ? I just got it out of oven I used spring form pan and it has baked away from the sides I assume it’s done but still feels soft in center ?

  3. Does the cream cheese firm up in the oven? If it does mine did not. If you need to let the cake sit for a little bit after the oven you need to indicate that in the instructions. I cut mine after the bake and the cream cheese gushed out. Disappointed but BUT the cake is moist and tasty and the crumble is very nice. Will try again which is a good sign for others.

    1. Baking is a great way to use up cream cheese- I always have tons of cream cheese in the fridge as well and usually whip up a cheesecake or cream cheese stuffed bread.

        2. The spring form pan makes sense..but mine turned fine in the 9×9 cake pan I used. This cake was awesome..loved it. With a hot cup of coffee what a way to start the day!!
