WHAT DO YOU PUT IN TACO SOUP?

Taco soup is made with just 8 ingredients which can be found in your fridge or pantry for a quick one-pot meal.

  • Ground beef: can sub with lean ground turkey or chicken.
  • Onion: can sub with onion flakes or onion powder if desired.
  • Garlic: can sub with garlic powder but we highly recommend fresh minced garlic.
  • Bell pepper: add lots of flavor to the soup but are optional.
  • Rotel: is a canned tomato and green chili mixture and can be subbed with freshly chopped tomato if desired.
  • Cream cheese: cream cheese makes the soup creamy and helps raise the fat content for keto dieters. It can be subbed with low-fat cream cheese or heavy cream if desired.
  • Taco Seasoning: we highly recommend using our popular homemade taco seasoning recipe.

HOW LONG DOES TACO SOUP LAST?

This soup will last up to 4 days in an airtight container in the refrigerator. It tastes even better the next day!

CAN YOU FREEZE TACO SOUP?

Yes! You can freeze taco soup before adding the cream cheese because the fat int he cream cheese does not freeze well and will break up int he freezer. Instead,  add the cream cheese when reheating the soup. Freeze in an air-tight container for up to 6 months.

HOW TO MAKE CREAMY TACO SOUP IN THE SLOW COOKER?

Add all the ingredients except the cream cheese to the slow cooker. Cook on high for 3-4 hours or on low for 6 hours. Stir in package of cream cheese just before serving.

HOW TO MAKE CREAMY TACO SOUP IN THE INSTANT POT?

Sautee beef, onions, and garlic in the instant pot using the sautee function until brown through. Add all the remaining ingredients except for the cream cheese. Manually set the pressure on high for 10 minutes; release naturally. Stir in cream cheese and mix until melted.

  • Add 1 tablespoon oil to a pot or large pot or dutch oven, brown beef, onion, and garlic over medium-high heat for 7-8 minutes or until the ground beef is browned through.
  • Add the bell pepper, Rotel diced tomatoes, cream cheese, and spices. Stir for 4-5 minutes or until tomatoes are soft and tender and cream cheese is mixed through.
  • Pour in beef broth and reduce heat to low-medium. Simmer 15-20 minutes or until desired thickness is achieved.
  • Serve in small soup bowls. Top with freshly sliced avocado, sour cream, shredded cheese, freshly minced cilantro, jalapeno, and a drizzle of lime.

  2. I did not drain the fat from the ground beef after cooking it because it did not specify to do so in the instructions & now my entire pot of soup is fatty & very greasy. Is there a way to fix this?

    1. Once you refrigerate it all the fat should rise to the top then you can scoop it out. Or you can put a big ice cube on the top of the soup and the fat should freeze to it then you can remove it that way.

    2. I’ve learned from that mistake! Many recipes skip the part of draining the hamburger fat. We need to remember to do it on our own 🙂

  9. This was really good! I used cream cheese and made the recipe exactly as stated. It thickened up a bit and was more like a dip, so we used a few pork rinds along with it. Definitely great though, highly recommend. Super quick and easy too.

  13. Super easy and quick to make. I used ground turkey instead of ground beef but used all of the other ingredients- including the homemade taco seasoning. It reminded me more of chili than soup- maybe I didn’t use enough broth- but I liked it on the thick side. This was absolutely delicious. I will definitely make this again (and again)!   16. This is a delicious recipe! Yummmm. However, just as another reviewer said, the nutritional value did not come out right when I entered it into my tracker. My calorie calculation came out to be just shy of 500, and fat, protein and carb count was off. However, it’s still lower in carbs than most soups. I would just suggest recalculating as you make it if it’s important to you!

  17. Holy Cannoli Batman! We went Keto for the last year and this recipe is in our top 3 favorites! I went by the recipe exactly except I added a can of brooks chili beans. We serve this with avacado, lime wedges and a few rainbow tortilla strips (did I mention I’m not a strict keto-er??). Absolutely amazing!   18. I love this recipe, not doing keto however the flavor is amazing. I do a couple changes because my mother is began. I use vegetable broth and veggie meat crumbles. I also use vegan non dairy cream cheese, it’s so good, my grandchildren love it and have no idea it’s vegan.

Used red onion, added bell pepper and did 2 8oz cream cheese and 1 cup of heavy cream. Followed the recipe and made taco seasoning. Huge hit nothing left!! Another new favorite!! Thanks

  20. Hearty and filling, but I made this with cream cheese and it gave the broth an unpleasant sour tang. I think this might be better with the heavy cream so I will try that next time and see if that helps the flavor.

    Btw I recommend cutting the onion to 1/2 and instead of the canned tomatoes using 1 real one and it lowered my net carbs (total was 9g when I logged it.)

  22. Absolutely great! I used a can of regular diced tomatoes and a can of diced green chilli’s. Topped it off with some very spicy pepper powder. Wife loved it! I would be good over Rice or with a can of rinsed black beans (defeats the keto if you do that though).

      1. I store mine in a 6 cup container. So one serving would be about 1 1/2 cups. I’ve tried both the ground beef and ground turkey and both were delicious!

  26. This is an amazing recipe for anyone. If you would like to make it more keto friendly, omit the red pepper and cut the tomato and onion portion in half. You might also want to use red onion instead of yellow or white onion as it contains less carbohydrates. I add a bit of tarragon, basil, and red pepper flakes. If the omitted ingredients make the soup less creamy than you would like, add more cream cheese.
