- 1 cup sliced zucchini
- 1 cup broccoli
- 1/2 cup cherry tomatoes
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
- 1 tablespoon olive oil
- 2 Gorton's Signature Seasoned Salmon fillets
- Pre-heat oven to 375 Degrees F.
- Combine veggies in a large sheet pan. Season the veggies with salt, pepper, and olive oil. Place the fillets next to the veggies and bake 18-20 minutes or until the salmon is cooked and the veggies are tender.
A good start, add some homemade pesto, chopped garlic & EVOO to the vegs and mix them all together.
It looks delicious! I never thought about combining salmon and kale and especially making a casserole using kale.
Thanks for this awesome recipe.

We’ve been on a salmon kick around here lately. I’m loving the veggies you tossed in there, too…especially the roasted tomatoes. Sounds delicious, Layla! 🙂
Do you have to defrost the fish first or can it go straight from the freezer to the oven?
I had it at room temp for about 20 minutes before baking and it cooked perfectly in 20 minutes. Hope that helps!
Thanks! I’m putting it on my grocery list.
This looks like such a delicious and classic weeknight meal 🙂
