Roasted potatoes are one of my favorite side dishes because they are super easy to make and are a perfect side dish for almost any meal. Plus, you can use just about any kind of potato and it will be great!
Y’all know my little obsession with cilantro.. no? I use garlic and cilantro in most of my savory dishes because the flavor combination is just mouth watering.
I coated these potatoes with a garlic, cilantro, and olive oil “pesto”– Doesn’t that look so good!After smothering the potatoes in the yummy garlic cilantro mixture I roasted them single layer for 40 minutes at 400 degrees.
The potatoes should be nice and crispy on the outside and soft and moist on the inside. You can serve them as a side dish or just grab a fork and enjoy them with hot sauce like I did!

- Preheat oven to 400 degrees.Coat a 9x13 inch pan with cooking spray, Set aside.
Add cilantro, garlic, olive oil, salt and pepper in the food processor and blend for less than 1 minute or until fully diced. In a large mixing bowl combine the potatoes and cilantro mixture until the potatoes are fully coated.
Add potatoes to prepared pan. Bake for 35-40 minutes, or until potatoes are just tender.
I’ve made this same recipe for years, I like them a little crispier, so use a 430 degree oven and cook maybe 25 – 27 min or more. Thank you, it’s delicious and wonderfully flavored. I really love them with a little Korean Chili paste Gochujang and it’s wonderful!
I used red skinned potatoes for this recipe.. they turned out beautifully- crispy outside and tender inside.. absolutely delicious.

I don’t know why but the second I read that recipe title I thought – CAULIFLOWER. this combo would kill with some roasted calui and maybe a sprinkling of parm reg, def going to try!
