I make the resolution every year but a few weeks in, I give up. This year, I’m thinking of giving the paleo diet a go. My husband has been on the paleo diet a few months now and he’s always raving about it. He’s always whipping up delicious low-carb paleo recipes and I’m always there to help him eat the dishes ☺️

These 2 ingredients banana pancakes are one of his favorites. We’ve made them a few dozen times in the past year and every time we do, my husband says that he can’t believe it’s just eggs and bananas!

It’s hard to believe, isn’t it? Just an egg and a banana will make these moist and delicious pancakes. They literally take 30 seconds to prep and another minute to cook!

2 ingrident banana pancakes (6 of 8)Now, if you’re expecting the classic carb filled pancakes then you will be disappointed. The texture of these pancakes is rather dense and moist unlike regular pancakes. If you’re on a paleo, low carb or trying to lose weight, then you will love these.

Here are some tips to get the perfect result each time you make the pancakes.

  • Because there’s no flour in the pancakes, there’s nothing holding the pancakes together so be sure to keep the pancakes small ( I use 2 tablespoons of batter per pancake)
  • Be careful when flipping the pancakes, it helps to use a thin spatula.
  • Add nuts, chocolate chips or any other toppings after the pancake is on the skillet.

Talking about toppings, feel free to add whatever toppings you wish in the pancakes after you’ve poured the batter into the skillet. We find that nuts and/or chocolate chips go really well in these pancakes. A tablespoon of coco or protein powder is another great option if that’s your thing. If not, these pancakes taste seriously good on their own ????

Healthy 2 Ingredient Pancakes (Paleo, Gluten & Dairy-Free, No Sugar added)

Ingredients 

  • 2 medium ripe banana
  • 2 medium eggs
  • Butter or oil, for the pan
  • Optional extras:
  • 2-3 tablespoons almond meal
  • 1 tablespoon cocoa powder or protein powder
  • 1/4 teaspoon baking powder, for fluffy pancakes
  • 1/4 teaspoon vanilla
  • 1/4 cup chocolate chips or fresh berries
  • pinch of cinnamon

Instructions 

  • Peel the banana and break it up into several big chunks in a bowl. gently mash the bananas into smaller chunks using a fork. Add the eggs to the mashed bananas and stir with the fork until you have a custard-like consistency. The batter will be runny and should have a few clumps of bananas. (optional: add 1/4 teaspoon baking powder, 1/4 teaspoon vanilla, pinch of cinnamon, 1 tablespoon coco-powder)

  • Heat a griddle over medium heat and Melt in about 1/4 teaspoon of butter in the pan. Drop the batter on a hot griddle: Drop roughly 2 tablespoons of batter onto the hot griddle. This would be a good time to add the nuts, chocolate chips or berries if desired.

  • Cook for 1 minutes or until the bottoms look browned and golden when you lift a corner.
  • Gently flip the pancakes and cook for another minute on the other side.Transfer the cooked pancakes to a serving plate and continue cooking the rest of the batter.

  • Serve Pancakes warm; they are best when eaten fresh off the griddle and still warm. Serve with maple syrup, honey, or any extra toppings.

  2. Thank you. I saw this type of recipe on WW, but it didn’t have variations attached. Also, some variations in your comments section are intriguing. I will try again using this and its variations.
    I did find that tiny is better when no variation is used. Also interesting would be the comment of the toaster oven. So many creative cooks in your group.

  3. I had to add a lot of things to make this pancake-like:

    1 tbs cocoa powder
    Pinch of cinnamon
    2 tbs coconut flour
    2 tbs oats
    Baking powder

    I get the novelty of minimal ingredients, but this one just didn’t hit the mark.

  4. Hi, can I make these using only the egg whites? If so, will it taste differently? more fluffy perhaps?

    1. I haven’t tried with just egg whites but I do suspect they will turn out fluffier.

  5. Add a few tablespoons of self rising flour just for that extra touch and these are wonderful!! I have never found such a delicious healthy recipe. Most times, healthy versions of food are just… bleh… but this, this is good!

  7. It wasn’t bad… It tastes like a omelette and I absolutely hate eggs. It was mushy. I added honey on top so it tasted better. It wasn’t bad though. If you have no problem with eggs then this is for you. May or may not make it again. Next time i’ll just add chocolate chips or oats.

As stated on your recipe, I added the toppings after I put the batter on my pan.it tasted like banana nut bread!!! Thank you!!! You make my morning! And these are kid approved!! I can now enjoy pancakes without getting sick!!

  9. THIS RECIPE DOES NOT WORK. I EVEN LOOKED UP THE SAME RECIPE ON YOUTUBE AND THEY MADE THEIR BATTER IN A FOOD PROCESSOR WHICH IS WHAT I DID. PANCAKES NEED A LEAVENING AGENT IN ORDER TO HELP THEM RISE WHICH THESE DON’T HAVE.

  12. This is a joke, right? I ended up with an Eggy, burnt, Banana mess. :/ i am a seasoned cook and can make anything. I had a feeling something wasn’t going right but i tried many times. Each time, they are burnt and taste like egg omelettes with banaNa.

  13. I just tried making these for our 3 year old daughter who loves bananas and they turned out absolutely delicious!!! She loves them and I love them so this weekend I will make them for my husband as well. I didn’t add anything to them because the sweetness of the banana flavored them plenty enough. This is my new favorite go-to breakfast food 🙂

  14. Tip: Beat the egg whites separately and then fold into the mixed mashed banana/Yolks. Not only will this create a fluffier batter that stays where you put it – but it creates perfect pillowy pancakes!
