Quick and Easy Meal Ideas Under $10

If you are a mom or dad I’m sure you know how hectic it can get when cooking for the little ones. That’s not to mention how expensive a meal can end up costing! When Kraft challenged me to create a family meal for under $10 I jumped right in and accepted the challenge because I’m always looking for ways to make cooking at home a little less expensive.

If you have been reading my blog then you know how much I love making quick and easy meals. Like seriously, I love cooking but do not like babysitting the kitchen all day.

Quick and Easy Meal Ideas Under $10I decided to go with one of my all time favorite comfort food and spice it up a little with simple ingredients. I decided to make southwestern broccoli mac & cheese casserole with vanilla and chocolate parfaits.What’s a southwestern broccoli mac & cheese casserole you ask? well it’s just another name I give recipe that I create since it’s never been done before.

This casserole is super easy to make and is ready in under 20 minutes! For the base you will need a box of mac & cheese and a cup of broccoli cooked al dente style. For the top you will need a pack of Kraft fresh take southwestern 3 cheese blend which is only $1.98 at Walmart. Cook the mac & cheese according to the package and mix in the cooked broccoli then pour into a casserole dish. Top with a layer of craft 3 cheese blend ( inside the freshtake box) and a layer of southwestern bread crumbs ( also inside the fresh take box).  Bake for 5 minutes just to get the cheese melted and then serve.

How is was that! One of my new favorite quick and easy casseroles. This is just a basic casserole but you can also ad chicken, beef, or bacon if you wish. You can make the casserole ahead of time, store  in the fridge for up to 3 days and reheat as needed.

The parfaits are even easier to make! Just whip up the puddings ( takes less than 3 minutes), blend the graham crackers in the blender and then layer in cups.
