Heat skillet or pan on medium/high heat. Saute onion in about ½ teaspoon oil for 5 minutes until translucent and slightly browned.
Add cumin, garlic, jalapeno, red pepper, chili powder, oregano, salt and beef, stir for 10 seconds.Break the meat into large chunks and add water. Continue to stir the meat, breaking it into smaller pieces with the water stir frequently, for about 8-10 minutes or until the meat is no longer pink.
Remove the meat from the skillet into another bowl and rinse skillet. Add 1/2 teaspoon oil and Heat on medium/high heat. Cut french bread into half, add about 1/3 cup taco filling, top with about 1/4 cup cheese, cook for 2-3 minutes on each side or until crispy.
