Easy Southwestern Fiesta Chicken

Ingredients

  • 3 cups shredded rotisserie chicken or any leftover chicken
  • 2 tablespoons oil
  • 1/2 cup onion diced
  • 2 garlic cloves minced
  • 1 -14 oz can of black beans
  • 1- 14 oz can of corn
  • 1 packet taco mix about 3 teaspoons
  • 1/2 teaspoon salt
  • 1/4 cup chopped cilantro

Instructions

  • Heat a large heavy-duty pan to medium/high heat.

    Add oil and onions. Cook onions for 2-3 minutes or until almost golden. Add garlic; cook for a few seconds then add beans,corn, salt and taco seasoning. Cook down for another 2 minutes while stirring.

    Lastly, add the cooked shredded chicken and cilantro. Cook for 2 minutes.

    Remove from heat and serve with a side of rice or in a burrito.
