Crispy Broccoli & Cheese Fritters are mindblowing delicious! They only require 8 ingredients and have a low-carb, keto option! This is an appetizer you are going to want to sink your teeth into!
Blanch broccoli florets in a pot of boiling water for 2 minutes or just until cooked. Drain well and cut into small pieces (almost like broccoli rice).
In a large bowl, whisk the eggs. Add the cheddar cheese, parmesan cheese, garlic, flour, spices, and chopped broccoli to the bowl. Stir until fully combined.
Heat oil in a non-stick pan over medium-high heat. Scoop 1/4 cup of batter and drop into the pan, gently flattening with a spoon, to about ½ inch thickness.
Cook each fritter for 2 to 3 minutes per side until golden brown. Repeat with remaining Batter.
Serve with sour-cream, Greek yogurt, Sriracha mayo, or your favorite dipping sauce!
