Easy Pastrami, Egg & Cheese on A Bagel with Sautéed Onions & Jalapeño
This recipe makes one sandwich. Double or triple as needed.

1slicepepper jack cheesefeel free to use any other kind of cheese
Heat a small pan to medium heat. Add oil, onion, and jalapeño; sauté for 1-2 minutes or until the onion begins to brown on the edges. Crack egg on onion mixture and cook for 1-2 minutes then flip, top with pepper jack cheese. Allow cheese to melt then remove from the heat.
gently heat the pastrami on the same pan for 1-2 minutes (This step is optional, you can also add the pastrami straight from the fridge on-top the egg). Place egg & cheese on a toasted bagel, top with pastrami and enjoy!
