I’ve made my share of zucchini noodle dishes and this quick 4 ingredients, 10 minute is another great way to cook zucchini noodles. This recipe is all about 3 simple flavors. The garlic, butter and parmesan.
Minced garlic (lots of it!) is first cooked in butter until it releases all of its natural flavors. The zoodles and parmesan cheese,  a pinch of salt and pepper are then added and cooked al dente. The whole cooking process takes less than 5 minutes because the zoodles only need a minute to cook!

Ingredients 

Instructions 

  • Spiralize zucchini into thin noodles using a spirlizer.

  • Heat large pan on medium-high heat. Melt butter, then add garlic. Cook garlic until fragrant (about 1-2 minutes) Be careful not to burn garlic.

  • Add the zucchini noodles and grated parmesan cheese and salt & pepper to taste. Cook for 1-2 minutes or just until the zoodles are al dente.
  • Remove from heat and serve immediately. Top with more parmesan if desired.

Notes

*After spiralizing zucchini, place spiralized zucchini on a few paper towels and sprinkle with a light layer of salt. Cover with another paper towel and rest for a few minutes. This will help draw the liquid out of the zucchini. This step is optional but highly recommended.

  3. How can something so simple be so delicious?? This is my favorite Zoodle recipe so far. Sprinkled in just a few red pepper flakes.

  4. The total calories should be about 475. That’s 204 for the butter, 99 for the zucchini, 142 for the parmesan, and 28 for the garlic.

  5. I have seen were a plate of pasta is 240 cal and 44 carbs versus a plate of zucchini noodles at 40 cal and four carbs and then I would think you would detect the fiber from that on the carb count. Donโ€™t remember my source though

  8. We made this in lieu of pasta, to serve under Shrimp Fra Diavola. It was as delicious as any wheat pasta. I salted, drained and dried on paper towels before the saute. iโ€™m saving this!

      1. Can I spiralize ahead of time ? say the nite before and drain and refrigerate til I use them the following day?

  13. I made these and while the sauce and taste of the noodles were good, I didn’t like the crunchiness of them. The water content was also too high.

    1. Someone up thread said they salted, drained, and patted dry the zoodles beforehand. This might solve the water and crunchy problem. They should be more pasta like in texture. This is usually done with most squash recipes anyway! Hope that helps!

  15. Thanks for the tip about the salt and paper towels. I often find my zoodles to get watery quickly, I was thinking I should try to get some of the water out first. Great to know it works well!

  16. On your note – after weeping the zucchini, should I try to wipe it afterward to remove the remaining salt, or will that dissolve into with the water that is drained off?
