Healthy zoodles (zucchini pasta) cooked in butter, garlic and parmesan. This extremely flavorful and fragrant dish makes an unbelievably delicious and healthy dinner in under 10 minutes.Once you try zucchini noodles, there’s no going back. I’m obsessed. Zucchini noodles (aka zoodles) make it 100x easier to eat healthier and to still enjoy all of your favorite pasta dishes guilt free.
I’ve made my share of zucchini noodle dishes and this quick 4 ingredients, 10 minute is another great way to cook zucchini noodles. This recipe is all about 3 simple flavors. The garlic, butter and parmesan.
Minced garlic (lots of it!) is first cooked in butter until it releases all of its natural flavors. The zoodles and parmesan cheese, a pinch of salt and pepper are then added and cooked al dente. The whole cooking process takes less than 5 minutes because the zoodles only need a minute to cook!
Garlic Parmesan Zoodles (4 Ingredient, 10 min)
Ingredients
- 2-3 medium zucchini, spiralized
- 2 Tablespoons butter
- 2-3 large cloves garlic, minced
- 1/3 cup parmesan cheese, grated
- salt & pepper to taste
Instructions
- Spiralize zucchini into thin noodles using a spirlizer.
- Heat large pan on medium-high heat. Melt butter, then add garlic. Cook garlic until fragrant (about 1-2 minutes) Be careful not to burn garlic.
- Add the zucchini noodles and grated parmesan cheese and salt & pepper to taste. Cook for 1-2 minutes or just until the zoodles are al dente.
- Remove from heat and serve immediately. Top with more parmesan if desired.
Notes
This is the best meatball recipe I have tried. Really juicy and great seasonings. My sons ate them with zoodles. We are enjoying a lot of recipes on this site. Thank you!
I use a Ninja spirilzer..it’s amazing..
I added a few diced eggplants and some diced d add sun-dried tomatoes before I added the zucchini. It was delicious!
How can something so simple be so delicious?? This is my favorite Zoodle recipe so far. Sprinkled in just a few red pepper flakes.
The total calories should be about 475. That’s 204 for the butter, 99 for the zucchini, 142 for the parmesan, and 28 for the garlic.
I have seen were a plate of pasta is 240 cal and 44 carbs versus a plate of zucchini noodles at 40 cal and four carbs and then I would think you would detect the fiber from that on the carb count. Donโt remember my source though
There is no nutritional facts on this . Need calories, net carbs, sodium ect please
Absolutely delicious. I also added some chopped bacon and toasted panko breadcrumbs but even without them this is so tasty. Definitely a keeper!!!
Delicious and easy!!
VEry yummy
Need carb count
We made this in lieu of pasta, to serve under Shrimp Fra Diavola. It was as delicious as any wheat pasta. I salted, drained and dried on paper towels before the saute. iโm saving this!
I made this dish for my husband – he was sure he wouldn’t like it. Loved it!! We will definitely be making it again. (sorry about the caps.)
I made this for my husband and he loved it. Great alternative
I made this dish as a sIde dish with some fish and it was delicious.so quick and easy to make. Thank You. I will be making this dish often.
Excited to try this! I have zoodles in my freezer. About How many cups of zoodles do you think you use?
Ha! Zoodles, not doodles…
Haha, no problem, I’ve updated it for you! <3
Can I spiralize ahead of time ? say the nite before and drain and refrigerate til I use them the following day?
Is there a fiber content for it?
I made these and while the sauce and taste of the noodles were good, I didn’t like the crunchiness of them. The water content was also too high.
Someone up thread said they salted, drained, and patted dry the zoodles beforehand. This might solve the water and crunchy problem. They should be more pasta like in texture. This is usually done with most squash recipes anyway! Hope that helps!
Is it grated Parmesan cheese? Because it looks like shredded in your picture..? Thank you!
Thanks for the tip about the salt and paper towels. I often find my zoodles to get watery quickly, I was thinking I should try to get some of the water out first. Great to know it works well!
On your note – after weeping the zucchini, should I try to wipe it afterward to remove the remaining salt, or will that dissolve into with the water that is drained off?
What are the little red things you have put on top in the pictures? Red pepper flakes? You don’t have have this listed in the ingredients.
They are red pepper flakes and they are optional! ๐
Can you please tell me what spiralizer you are using? Is it electric? That would be so much easier?? Thank you!
I’m using the spiralizer found in my shop here: https://gimmedelicious.com/shop/ It isn’t electric and I’ve never seen an electric spiralizer. It might seem like it’s electric because I have the video on fast ๐
LOL! Yes, that is why it looks so fast. Thank you!!!!
1st time making zucchini noodles and this dish was a treat. I am thinking of adds. Yum
Wish I knew…
How many calories are in this?
I got the one from Wal-Mart for $15.00. Works really well. Not electric, but didn’t take no time at all.
