You basically saute everything in a pan until all the flavors combine and you’re done! The flavors of this chicken are beyond incredible, your family will never believe you when you tell them how easy it was to make. Soak up all the compliments and thank me later 😉

Easy Southwestern Fiesta Chicken

  • 3 cups shredded rotisserie chicken, or any leftover chicken
  • 2 tablespoons oil
  • 1/2 cup onion, diced
  • 2 garlic cloves, minced
  • 1 -14 oz can of black beans
  • 1- 14 oz can of corn
  • 1 packet taco mix, about 3 teaspoons
  • 1/2 teaspoon salt
  • 1/4 cup chopped cilantro


  • Heat a large heavy-duty pan to medium/high heat.

    Add oil and onions. Cook onions for 2-3 minutes or until almost golden. Add garlic; cook for a few seconds then add beans,corn, salt and taco seasoning. Cook down for another 2 minutes while stirring.

    Lastly, add the cooked shredded chicken and cilantro. Cook for 2 minutes.

    Remove from heat and serve with a side of rice or in a burrito.

  1. This was delicious and will be on our weeknight dinner rotation. It was good as is but adding green chiles took it up a notch as well!
