This fiesta chicken is probably the most festive weeknight dinner ever. It’s super easy to make, and comes together in under 10 minutes. Now that’s fast!
The secret to this fiesta chicken is a can of black beans, can of corn, taco seasoning and leftover rotisserie chicken. You basically saute everything in a pan until all the flavors combine and you’re done! The flavors of this chicken are beyond incredible, your family will never believe you when you tell them how easy it was to make. Soak up all the compliments and thank me later 😉To begin, saute onions in about 2 tablespoons oil, until almost golden. Add garlic.
Then add black beans and corn.
Taco seasoning…
Shredded rotisserie chicken and cilantro.
Cook for 5 minutes. And that’s it!!! The best most yummiest chicken ever. Serve with a side of rice, veggies, or in burritos.
Ingredients
- 3 cups shredded rotisserie chicken or any leftover chicken
- 2 tablespoons oil
- 1/2 cup onion diced
- 2 garlic cloves minced
- 1 -14 oz can of black beans
- 1- 14 oz can of corn
- 1 packet taco mix about 3 teaspoons
- 1/2 teaspoon salt
- 1/4 cup chopped cilantro
Instructions
- Heat a large heavy-duty pan to medium/high heat.
Add oil and onions. Cook onions for 2-3 minutes or until almost golden. Add garlic; cook for a few seconds then add beans,corn, salt and taco seasoning. Cook down for another 2 minutes while stirring.
Lastly, add the cooked shredded chicken and cilantro. Cook for 2 minutes.
Remove from heat and serve with a side of rice or in a burrito.
