On a cutting board or flat surface, roughly chop the cranberries and pistachios. Zest about half an orange.
In a large bowl, mix the chopped pistachios, cranberries, orange zest, and honey until well combined.
Transfer the mixture onto a cutting board or sheet pan and roll the goat cheese log onto the mixture until fully coated.
Serve the cheese log with crackers or crostini and drizzle with more honey, if desired.

To make ahead, after rolling the log in the nut mixture, cover with plastic wrap and place in the fridge for up to 48 hours. Remove to room temp 15-20 minutes before serving.
