By now, you all must now how much I love Mexican food. My instagram is packed with jalapeno and black beans. What can I say? I just love the stuff. How can you not LOVE mexican food when it’s so yummy, spicy and packeddddd with so much zest and flavor.
These crispy “fiesta” chicken wraps are one of my on-the-go meals. They are easy to prepare, double and triple well, and they freeze very well too!
I like to make a lot of wraps, place them in the freezer and then give them to my husband to take with him. He later re-heats them in the microwave and they are AMAZING and healthy. I would totally take these wraps over fast food any day.
To make these wraps, the main ingredients you will need is a can of corn, can of black beans, a few cups of shredded rotisserie chicken, and my favorite new obsession, mojo sauce.
The Mojo is a spanish sauce that’s used on almost everything there. Think of it like hot sauce but fresher and much zestier. It’s made with garlic, sarreno peppers (or jalapeno, chillis), cilantro, lime juice, and olive oil. Mix all the ingridents in the blender and your done. It really takes these wraps to the next level, so I highly reccomend you make it!
To make the wraps lay a tortilla flat, top it with about 1/2 cup fo the fiest chicken mixture, 2 teaspoons sour cream, and 2 teaspoons mojo. Wrap, lightly crisp in a pan, and dig in! You will have one of the best meals of your life. Plus, you can place the rest in the fridge or freezer and have them as needed.
Crispy Fiesta Chicken Burrito Wraps
- 4 large flour tortillas
- 4 tablespoons sour cream
- 1 teaspoon oil
- 4 tablespoons Mojo Sauce <--- Click for recipe
- 1/2 cup fiesta chicken per wrap <--- Click for recipe
Prepare fiesta chicken; set aside. Next prepare mojo sauce.
Lay a large flour tortilla on a plate. Top with 1/2 cup fiesta chicken, 1 tablespoon sour cream, 1 tablespoon mojo. Wrap into a tight burrito. and place on plate seam down. Repeat for reminding burritos wraps.
Heat a large pan to medium/high heat. Pour 1 teaspoon oil in pan, place wraps seam side down on pan. Crisp for 1-2 minutes on each side, or until golden.
Remove from pan and cut in half. Enjoy warm and crispy!
Recipe NotesWraps can be prepared ahead of time. crisped then wrapped in foil or plastic wrap in stored in the fridge for up to 1 week or freezer for up to 1 month. To reheat place in microwave for 1 minute.
Wrapped can also be placed in freezer before crisping then re-heat in microwave for 1 minute and crisp in pan until golden.
