Chicken breasts stuffed with a creamy spinach, parmesan, mozzarella, and cream cheese filling and pan seared to perfection. The result is tender cooked chicken filled with a gooey trio of cheese that will melt in your mouth. Cream Cheese Spinach Stuffed Chicken (Low-carb, Keto) Ever since I attempted the keto diet, I’ve been on the lookout for no carb recipes that are filling and packed full of protein. Although I’m not strictly following the keto diet because carbs always seem to find a way onto my plate, I feel so much better eating low-carb. I’ve lost a couple of pounds over the last few weeks so that’s a huge plus for me.

If you are on a low-carb or keto diet, trying to lose weight, or just want a healthy protein packed dinner, you’re going to love this cream cheese and spinach stuffed chicken. The chicken is not breaded and cooked in just a little bit of olive oil. This cooking method gives the chicken a nice and crispy crust without adding anything extra.Cream Cheese Spinach Stuffed Chicken (Low-carb, Keto) The filling is a mixture of cream cheese (use low-fat if needed), parmesan, mozzarella, and spinach. You can use fresh or frozen spinach but I recommend fresh spinach that has bee thinly sliced. This is a great way to get a few servings of spinach because the spinach melts right into the filling and is hardly noticeable. Cream Cheese Spinach Stuffed Chicken (Low-carb, Keto)

Instructions

  • To Make filling:In a medium bowl, combine spinach, cream cheese, parmesan cheese, mozzarella cheese, garlic, and salt + pepper until fully combined.

  • To Butterfly your chicken breasts: lay them flat on a sturdy surface. Place one hand on top to hold it in place and then slice 3/4 of the way through the chicken breast (be careful not to slice all the way through).

  • To Stuff the Chicken: Season the outside of the chicken with chili powder, Italian seasoning, salt, and pepper. Spoon 1/4 of cheese mixture into the middle of the cut chicken breasts and fold the chicken so the cream cheese is sealed inside. Use toothpicks to secure chicken if desired.

  • To Cook: Heat a non-stick skillet on medium high and add 1 tablespoon olive oil. Cook the chicken, covering the pan with a lid, for about 9-10 minutes per side or until the chicken is cooked through.

  3. THIS LOOKS DELICIOUS! sIMPLE AND EASY TO MAKE BUt maximum flavour! i Tend to stock up on vegetables when cooking chicken, but this looks really filling. one for the weekend! fortunately always have a good stock of cream cheese! sim x

    1. OMG make this recipe!! I am a newb when it Comes to cooking but this recipe is so easy, yummy, AND keto like what more could you ask for?? The changes I made were:

      – I seasoned breast with garlic powder, onion powder, salt, pepper, olive oil, paprika and red chili powder (I like to add as much flavour as I can LOL)
-in the spinach mix I added some crushed chili flakes (TRUST ME, DO THIS)
-and instead of frying it fully, I fried it for a few mins on each side then I baked it in the toaster oven covered with foil for 25 min (just because my chicken breast was on the larger side so I wanted to make sure it was fully cooked)

It turned out soooo juicy and good, just did one chicken breast as a trial run and I will definitely make more. It took me 30 minutes to prep so if you’re a college student like me this is such an easy recipe and it’s so quick with minimal clean up. My favourite restaurant makes a mean stuffed chicken breast and this was SO MUCH BETTER! Have this with a nice side salad and you have yourself a delicious and healthy dinner!

  4. Thanks for this! I didnt have cream cheese so I used plain greek yogurt. It turned out perfectly and the seasoning for the chicken also went with broccoli perfectly

    1. I was wondering if I could replace the spinach with broccoli.

  5. In just had to post and say thanks for sharing this delicious easy recipie!! It was a hit with my entire family. My teens loved it and even went back for another SERVING. Only thing I did different was season and BROWn the chicken on each side, layered a bag of spinach in casserole dish, drizzled with olive oil. Then I placed chicken on bed Of Spinach and stuffed with filling. The remaining filling I mixed the juices from skillet I browned chicken in and drizzled it between the meat and on top of bed of spinach. It baked well all together and we had an additional healthy serving of creamy spinach!! Will surely add this dish into my meal rotation.

  6. These were delicious and i loved how easy it came together!

  7. Turned out great, nice flavor I added some mushrooms to the pan while cooking and half and half and made a gravy to serve with. and dinner for two nights. added some crushed red peppers and added a little bite. works great in cast iron pan

    1. Hi, I did bake in oven because the chicken breast were so thick. I did season and brown in skillet to get the crust first, then I stuffed and baked in casserole dish. About 30 min on 350 degrees.

  8. This chicken recipe was delicious! I’m not great in the kitchen but This was so easy to put together. The flavors are fantastic and was just as good the next day for lunch. I Will definitely make this again.

  9. I tried this reciPe over the weekend and it was so delicious, thank you for sharing 🙂

  10. Made these last night and liked them. Will make again. thanks!

  11. Not all low carb diets are Keto!
In fact, to make it a true keto, you probably want to use full fat everything and maybe even add some bacon 🙂

  12. Awesome recipe…it was a hit with my kids and grandkids!

    1. Delicious!! Will definitely add this to my favorite easy and most yummy recipe file. Might add some sun-dried tomatoes next time just to give a little zip. Perfect as is, though. Thanks!

  13. Very easy, super delicious, and only 3 Grams of carbs!!! Will be making this again!

    1. I haven’t tried these chicken breasts in the air-fryer so I honestly can’t recommend it.

  14. How Is protein only 3 g chicken is Way more Then that alone

    1. Thanks for pointing that out Marsha! It’s 30g of protein per 4 oz of chicken breasts. I’ve updated the post to reflect the correct amount.

  15. You need to recheck your calories. There is at least 180 in one 4 oz chicken breast alone without the cheeses.

    1. Yes, there was an issue with the calorie counter and we’ve updated it with the correct macros!

  16. wow. lovely. so delicious. i got so many compliments and i will certainly cook this again!! it’s easy. thanks so much.

  17. This Is great. Even If filling runs out of the chicken while cOoking it doesn’t mAtTEr- it nicely scoops up when removing the chicken frOm the skillet. Toothpicks are very helpful. I find 8 minutes cooking each side Is plentY. The kitchen smells heavenly when cooking….

  18. Um. I’m not sure your nutrition information is correct for this. It says one serving has 3 grams of protein, and just a chicken breast with no cheese or anything has at least ten times that amount. Might want to revise your chart.

  19. made this tonight, so
delicious!! And the sauce it Made from searing amd cooking in the pan was so yummy drisSled over the sliced chicken. Will definiTely make agAin!

  20. Hey! I just had a question regarding the calories. It says that one chicken stuffed is 121 calories? Is that a 100% certain? Because i am currently counting all my calories and want to make sure its accurate 🙂

  21. yes, it looks like the nutritional info is way off. I plugged it into Sparkpeople and this is what I got. Still going to make it cos it sounds scrumptious!

  22. Any nutritional information for this RECIPE?

    1. Yes, I updated the post to reflect the macros. The nutritional info box should be found right under the recipe instructions.

  23. This was delicious, Although next time i’ll only use half the spinach the recipe Calls for. It was very good, just a little too much stuffing for the size of my chicken breasts.

  24. I used a spinach and kale mix. Turned out great. Would make again.

  25. I did 1 cup of spinach so I could hide it better, accidentally cut through my chicken instead of butter flying 2 of them, and all of my family loves it. Even the 4yr old who hates everything I put in the chicken when cooked, and the hubby who hates spinach.

    1. Lol you took the words right outta my mouth!

  26. I love this easy recipe. It is our Fav Chicken Dish! Thank you 🙏🏻

  27. YUMMMM! This is right up my alley! Can’t wait to try it!

  28. This was delicious! I finished in the oven due to my breasts being a little thick, but we will definitely be repeating this in our low carb home! Thank you!

  29. This tasted so yummy and quite easy to make, my whole family enjoyed it!
I think it would even be great with a little bit of lemon juice sprinkled over it.

    1. yes, you can bake the chicken breasts before or after searing in the pan but I suggest searing the chicken first to give it a nice golden color and texture and to seal in the juices. Bake 28 to 32 minutes or until juice of chicken is clear when the center of thickest part is cut (at least 165°F).

  30. I never ever rate recipes but This recipe was perfect! I have texted all of my family aNd friends aboUt it that’s just how good it was! Thank you so much for sharing this !!! Very filling and tasty No changeS need to be made at all and i even made a hot spiNach dip using the remainder of the sPinach and cReam cheese Filling!

  31. How can the nutritional information be correct? This seems more like the info on just a chicken breast alone without the stuffing. Is that right? is the actual needed information found anywhere?

    1. where are you seeing nutrition info? I keep missing it I GUESS. Hmmm

  32. The video shows it being cooked without being covered. It seems that the covering doesn’t allow the chicken to Brown. It more or less boils/STeams. Which is correct?

    1. We covered it for a few minutes. Covering it will help the chicken cook through but you can do it either way!

  33. I actually love when the spinach cheese mix leaks out because Then you can use it for a sauce with pasta. So yummy!

  34. Just made this anD its great. I had tr keeping cheese fromleaking out oF chicken so i wra them in bacon lol.

    1. Good idea! I was planning on using less spinach next time, but wrapping it in bacon seems like the way to go!

  35. Just made this tonight… super yummy! I couldn’t wait to taste it! Added it to my go to recipes.
