Are you on a low-carb diet and getting sick of the same old, same old? This dish is completely diet-friendly, yet feels so decadent. Keep it in your back pocket for when you are craving something naughty. 

How to Make Creamy Broccoli with Cheese

  • Preheat a skillet with oil, brown chicken until its golden.
  • Cut broccoli into equal-sized pieces, add them to the chicken.
  • Combine cream with parmesan cheese and parsley garlic salt.
  • Pour the mixture over the broccoli pieces.  
  • Bake at 350℉ for 10 minutes. 
  • Sprinkle some mozzarella cheese on top and bake for 7 more minutes. 
  • Serve right away while the cheese is all melted.

Making Creamy Broccoli and Cheese Casserole in Advance 

Prepare the chicken, broccoli and cheese casserole up until you are supposed to pop it in the oven. Cover the casserole with foil and store in the refrigerator for up to a day. When you are ready to eat, pop it in the oven according to instructions. 

Storing Leftovers 

Store your casserole in the refrigerator for up to 3 days. You can reheat it in the microwave, but if you want it to get crispy again, reheat it in the oven for a few minutes.

Casserole Variations

What I love about this dish is just how versatile it is. Try out the follow variations when you want to switch things up: 

  • Add rice. Looking for a heartier side dish? Add a couple of cups of cooked white or brown rice to the casserole to make it more filling. 
  • Add a dash of smoked paprika. Smoked paprika adds a wonderfully earthly flavor to cheese sauces. If you have some lying around, add a tablespoon to the cream, parmesan and parsley salt mixture. 
  • Top with buttered crumbs or fried onions. If you want a bit of crunch at the top, add a hefty serving of buttered crumbs or fried onions on top. Who said you have to wait for Thanksgiving?

  • Bake at 350F for 10 minutes. Remove from the oven and sprinkle the mozzarella cheese on top.
  • Bake for 7 more minutes or until the cheese gets slightly golden. Serve right away while the cheese is still all melted.

  1. Good base to work from. I put some diced onion in it as I cooked the chicken. End product was runny – not sure why. I liked the broccoli to be a bit crunchy. Used a little more garlic and some pepper. Also, I used a mix of shredded Italian cheeses with sharp cheddar. I

  2. This was absolutely amazing! Instead of using garlic salt, I used garlic powder to help cut down on the sodium. I don’t see where people are saying that the sauce was runny and the broccoli was to crunchy. I thought it was all PERFECT!!!! It will definitely will be a regular meal in our house 🙂

  4. Unlike other commenters, I appreciated the fact that the recipe didn’t cook the goodness right out of the broccoli. It’s so much better for you if left a little crunchy.   5. I replaced the cream with homemade thick cashew milk. Towards the end of cooking the chicken, I added the broccoli to the skillet to pre-cook it before putting it in the oven. My dish came out perfectly. Easy and tasty!

  10. Great recipe. I am not one for usually following but stumbled across this one in search for something else. Not sure why some say it is runny unless you didnt use real heavy (whipping) cream. Turned out perfect I did add some cooked rice to it as well as a pinch of smoked paprika…. was perfect.

  11. I just made this recipe exactly as it is written. It was very easy to make and turned out delicious! My broccoli was a little crunchy which I like as opposed to being mushy. Maybe I cut my broccoli smaller than other people who left comments so it cooked a little faster? The extra sauce in the finished meal is great if you want to add garlic bread or pasta. I just ate it as is. I give it an A+.

  12. After reading some comments, I knew I needed to add and change a few things.
    Diced chicken, cooked in a regular frying pan, added sliced shiitake mushrooms, better than bullion chicken paste, and a little bit of minced garlic.
    Steamed fresh broccoli, drained and put in pan with chicken, cooked about two minutes to allow the broccoli to get the flavor.
    Placed chicken and broccoli in a baked dish, poured the cream and Parmesan mix over everything, mixed that all together. Baked at 350 for 15-20 minutes. Added colby jack and mozzarella easy melt shredded cheese, baked until golden brown on top. Served over jasmine rice. It was delicious!

  13. I am making this tonight using plant based chick’n and I have had to cook it much, much longer then the recipe called for or the broccoli would be raw.

  14. I don’t understand step 3. . In your directions you say” Combine whipped cream, parmesan cheese, and garlic salt together. Pour the sauce over the broccoli”. Does this mean I need to whip the cream then stir in parmesan, garlic salt to the whipp[ed cream then pour the mixture over the broccoli? Or do I simply combined the heavy cream, parmesan and garlic salt and pour the mixuture over the broccoli? thank you for clarifying.

    1. Oh no, no need to whip the cream. Simply combine the heavy cream and pour it over the broccoli.

  16. Very good! Make sure to cook the broccoli in microwave for a few minutes before adding to chicken so it’s not crunchy.

  17. When I made this recipe everything that could go wrong did. I got the chicken started then realized I didn’t have enough broccoli so I did half broccoli and half cauliflower. Then I didn’t read the directions well enough so I mixed the mozzarella in with the heavy cream and Parmesan. Then I messed up and put granulated garlic instead of garlic salt! I was convinced it was going to taste terrible!! To my tremendous surprise it was delicious! My hubby loved it and said he wants me to add it to my ‘rotation!’ Thank you for creating a recipe that is bulletproof enough to deal with me 🤪

  18. Delicious! But made the following changes
    Par cooked broccoli first
    Added smoked paprika to cream mix
    Added 2 veg stock cubes to cream mix
    Added 4-5 spring onions
    Added crushed pork rinds on top
    Cooked for an extra 10 minutes to thicken sauce on

  19. The broccoli wasn’t nearly cooked enough for me when the directions as is. It was still very crisp and almost raw. Had to bake it about an extra 30 mins and was still pretty crisp. Taste good though.

  20. Was delicious. Is it supposed to be runny? We all enjoyed it anyway, but I didn’t think it looked like it was runny in the pictures.

    1. It should not be runny. Next, I would leave it in the oven a little longer.

  21. The broccoli should be steamed first. It didn’t cook long enough to tenderize it. My good natured husband laughed and ate it anyway.
