Prepare Pistachio filling: Heat a large heavy-duty pan over medium heat. Add the chopped katafi and butter and cook strigging occasionally, until its golden brown and crispy, then transfer to a medium mixing bowl. Add the pistachio cream to the toasted katifi and gently mix to combine.
Melt Chocolate: Melt chocolate chips in the microwave in 30-second increments, gently stirring to melt (alternatively melt over a double burner).
