Easy Pastrami, Egg & Cheese on A Bagel with Sautéed Onions & Jalapeño Happy Sunday!

Winter mornings are the worst. As soon as I get out from under my comforter I begin to feel the cold chills and run right back in bed. I usually end up sitting in bed for 30 minutes on my laptop before I eventually get up. Am I the only one who does this? I seriously need a pair of fuzzy winter slippers around here!

Okay let’s talk food… I love cold cuts in the morning. Top them on eggs, in omelettes, or eat them alone like that. Pastrami is my favorite cold cut of all time. I can’t go a week without eating a pastrami melt. Sometimes I try to sneak some in the morning on my egg and cheese. Delicious!!

I really can’t stress enough how AMAZINGGG this pastrami is on an egg and cheese. Especially when there are sautéed onions and jalapeños and some pepper jack cheese.  This is usually a breakfast sandwich but it’s also serves great as a dinner sandwich!

Easy Pastrami, Egg & Cheese on A Bagel with Sautéed Onions & Jalapeño I kinda ran out of pastrami in the middle of making this sandwich, wish I could have loaded it. Feel free to add as much pastrami as you like! This recipe also works really well with bacon, just be sure to cook the bacon fully.

Easy Pastrami, Egg & Cheese on A Bagel with Sautéed Onions & Jalapeño

This recipe makes one sandwich. Double or triple as needed.

Ingredients 

  • 1 egg
  • 1 bagel
  • 1/4 cup sliced onions
  • 1/4 jalapeño sliced
  • 1 teaspoon oil
  • 1 slice pepper jack cheese, feel free to use any other kind of cheese
  • 6-12 slices of pastrami

Instructions 

  • Heat a small pan to medium heat. Add oil, onion, and jalapeño; sauté for 1-2 minutes or until the onion begins to brown on the edges. Crack egg on onion mixture and cook for 1-2 minutes then flip, top with pepper jack cheese. Allow cheese to melt then remove from the heat.
  • gently heat the pastrami on the same pan for 1-2 minutes (This step is optional, you can also add the pastrami straight from the fridge on-top the egg). Place egg & cheese on a toasted bagel, top with pastrami and enjoy!

  1. Made this for breakfast. Instead of using a.bagel I used rye bread and put a light smear of Thousand Island dressing. My husband loved it and now I have a new breakfast dish to use for company!
