Quick one pan baked breakfast casserole is loaded with potatoes, broccoli, eggs and lots of cheese for a flavor-packed breakfast the whole family will love! I remember a few years back I used to sleep like 4-5 hours a night and that was it for me. I would stay up all night then catch few hours between 2 and 6 am and then wake up feeling energized and refreshed.
Now with my little one around by 9 p.m I’m out of it and can barely lift a finger. I sleep a good 7-8 hours a night and it’s still not enough. Seriously, kids do drain the energy out of you big time!
I’ve opted into finding simpler ways to make my favorite family meals without sacrificing a ton of time or energy.
This tater tot, bacon, egg and cheese casserole is perfect for busy people because you basically toss all the ingredients into the casserole dish and pop in the oven.
This is a good starter recipe for a basic tater tot casserole. You can and you customize the casserole and add additional breakfast ingredients if you prefer. Sausage, ground beef, Sautéed onions and green peppers, or mushrooms. The best part is that this casserole can be served for breakfast, lunch or dinner.
Tater Tot Breakfast Egg and Cheese Casserole
Ingredients
- 2 cups shredded cheddar cheese
- 6 eggs
- 1 cup broccoli uncooked
- 1/2 lb bacon, diced
- 1 cup milk
- 2 lbs frozen tater tots
- salt and pepper to taste
Instructions
- Preheat the oven to 350 degrees. In small saucepan heat water and add broccoli, cook for 2-3 minutes. Remove from heat and set aside.
Heat a large skillet to medium-high heat. Add the diced bacon and cook until browned and crispy. Drain on paper towels to remove any excess grease. In a large bowl whisk together the eggs and milk, sprinkle with salt and pepper. - Spray a 9×13” baking dish with cooking spray. Spread the tater tots on the bottom of the casserole dish, add a layer of broccoli and bacon. Pour the egg/milk mixture all over evenly then add the shredded cheddar cheese. Bake on the middle rake for 35-40 minutes.
My family loved it! Planning on making for Father’s Day as well – catered to his tastes.

Layla, I totally agree with you. I use to be able to get up early, stay up late with no problem. Now, by the end of the day I’m pooped and really like to sleep in. I think they make me need more sleep. Anything that saves time is wonderful. I love this dish and the addition of broccoli ๐
