This is a long time favorite recipe of mine and I can’t believe I haven’t shared it yet. It’s a “one pan” type of dish where you basically place everything in the pan and bake. Minutes later, a hearty and delicious dinner platter is ready. The reason this dish cooks so quickly is because of the chicken is cut into small bite size pieces and the oven temperature. The results are charred veggies and juicy chicken.
This is great when you are hungry but lazy and are on the edge of calling take out. Instead, pop these healthy veggies and chicken in the oven and I assure you, they will be ready before the takeout is supposed to arrive. Plus, they are 1000x healthier and tastier. Serve these veggies with a side of rice, quinoa, or bread.
To being, chop the veggies and chicken and place on a small baking sheet. Season with olive oil, salt and pepper,Italiann seasoning, and paprika. Gently combine and bake for 15 minutes. See the video below for more details!

15 Minute Healthy Roasted Chicken and Veggies (One Pan)
Ingredients
- 2 medium chicken breasts, chopped
- 1 cup bell pepper, chopped (any colors you like)
- 1/2 onion, chopped
- 1 zucchini, chopped
- 1 cup broccoli florets
- 1/2 cup tomatoes, chopped or plum/grape
- 2 tablespoons olive oil
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon italian seasoning
- 1/4 teaspoon paprika, optional
Instructions
- Preheat oven to 500 degree F.
- Chop all the veggies into large pieces. In another cutting board chop the chicken into cubes.
Place the chicken and veggies in a medium roasting dish or sheet pan. Add the olive oil, salt and pepper, italian seasoning, and paprika. Toss to combine. - Bake for 15 minutes or until the veggies are charred and chicken is cooked. Enjoy with rice, pasta, or a salad.
What kind of Italian seasoning does this want? Like packets found in the dressing aisle or the spices aisle? I can’t wait to try this!

You can grill on foil and it would take about 15-20 minutes with lid covered.

This is the third time I’ve made this. Highly recommend. I added carrot and mushroom this time. Previously, fresh Poblano and yellow squash. DELISH and soooooo easy!!
Can you make this with fish?
Made this tonight and it was a hit! Made some alterations. Used about half the zucchini (my family isn’t a huge fan), lots more bell peppers and broccoli. Used a little extra seasonings to accommodate the extra veggies. Served with riced cauliflower for me and pasta for everyone else. Will definitely make again!
Can you use frozen vegetable medley and rotisserie chicken breasts?
I would not recommend it. Rotisserie chicken is already overcooked and it will be very dry and tasteless. Fresh veggies would be much better. Change out the ones you don’t like and add something you do like
I used frozen veggies and they turned out just fine. Was still tasty. 😊

This was DELICIOUS!! I added baby carrots, yellow squash, poblano and red pepper flakes and ate it as is. No rice or noodles. Will definitely make it into the regular rotation!! So easy and very thrifty too!!

Super easy and super good. Ate it with garlic basil wild rice and mushroom risotto. PERFECT with both. Also added a little tzatziki one time which was a delicious addition. Overall LOVED
This is really good. I add chicken, eggplant, zucchini, yellow squash, red onion, garlic, frozen green beans , frozen broccoli & cauliflower & I also add soy sauce at like the last 5 minutes of cooking.. No need for rice or salad. It’s good the way it is & it’s a whole meal in itself ..

This chicken and veggies Recipe is one of my favs!!! I have added different veggies:cauliflower, Asparagus, green beans, the morE tHe merrier! My family likes it served over rice or spaghetti (although i like it as it is). The leftovers make a great lunch! Love it!!!
