In the past few years, I’ve shared many easy sheet pan recipes and this one is another favorite of mine. It’s very similar to the popular 15-minute chicken and veggies dish but instead of chicken, we’re switching things up a bit and opting in for sausage.
Healthy 20 Minute Sheet Pan Sausage and VeggiesI used smoked turkey sausage for this recipe. It can be found in the fridge aisle at your local supermarket and it usually comes either fully or partially cooked, but it will depend on the brand. Overall, any sausage should work for this recipe.

To being, chop all the veggies into small cubes. I used sweet potato, broccoli, and bell pepper. Asparagus, brussels sprouts, zucchini, onion, or baby carrots.

Next, slice the sausage into small 1” rounds and combine the veggies and sausage in a large baking sheet along with olive oil, garlic, Italian seasoning and salt & pepper.  To switch things up, you can always use either taco, cajun or your favorite spice blend place of the Italian seasoning.Healthy 20 Minute Sheet Pan Sausage and Veggies

Healthy 20 Minute Sheet Pan Sausage and Veggies

Ingredients 

  • 12-16 ounces Smoked Turkey or Chicken Sausage, about 3 cups
  • 2 cups sweet potato, diced into 1/2'' cubes
  • 2 cups broccoli florets
  • 1 cup bell pepper, chopped (any colors you like)
  • 2 cloves garlic minced
  • 2 tablespoons olive oil
  • 1 tablespoon Italian seasoning, or taco, Cajun of your favorite spice blend!
  • ½ teaspoon salt
  • ½ teaspoon black pepper

Instructions 

  • Pre-heat oven to 400F.

  • Slice the sausage into 1'' rounds. Dice the sweet potatoes into small 1/2'' cubes.
  • Add the sausage, veggies and minced garlic to a large baking sheet. Drizzle with olive oil and sprinkle with the Italian spices or your favorite spice blend. Seasoning with salt and pepper. Toss veggies with your hands until they are fully combined and coated with olive oil and spices.

  • Bake for 20 minutes, flipping halfway. Enjoy with rice, quinoa, in sandwiches or as is for weight loss!

Notes

Other veggies that are also great in this dish include zucchini, asparagus, green beans, brussels sprouts, grape tomatoes, onion, and carrots.

  1. This has become one of our regular recipes that we come back to time in again. It is excellent! Ingredients are low-cost, and they go along way. It is very filling and there’s always leftovers.

    I also like that it is a flexible recipe. We often add a replace certain things. I’ve added carrots, bell peppers. I’ve switched out the sausage with different meats. We love this recipe and have shared this recipe with friends and family.

I went to Asia for my spices, sesame oil soy sauce, etc, and I used fennel, brocolli, carrots potatoes, etc. I used smoked beef sausage and Aleppo pepper to top it off. A Good Old American Pie. We are so lucky for our Naties and immigrants thatconinues to influences our own dishes.

  8. So easy! I made this with hot Italian sausage, broccoli, red and green bell pepper, red onion, garlic roughly chopped, sweet potatoes and red potatoes. It made two sheet pans and took about 30 mins at 400°. I used a bunch of random spices and mixed it all together. We paired it with a wild rice and *chefs kiss*! I love the versatility and simplicity!

  9. I make a variation of this recipe almost weekly. I use whatever vegetables I have in my house, such as white or red or sweet or fingerling potatoes, red or green peppers, onions, broccoli, green beans, brussel sprouts, zucchini, or carrots, then I toss with olive oil and homemade taco seasoning. After roasting 20 minutes I add sliced, fully cooked chicken sausage. I took some liberties with the recipe but the concept is the same and it’s a great way to use up extra veggies.

  10. Had to use frozen sweet potatoes., no problem.
    Added 1/2 a white onion sliced. Only had frozen mixed veggies, used them. Used Mrs Dash table blend instead of pepper plus a smidgen of salt. Half way through I sprinkled some shredded Colby Jack cheese on top. SO DELICIOUS!

    1. There is an app called MyFitnessPal for phones (or a website online) where you put in the entire recipe ingredient list and how many servings. You can modify based on what specific ingredient you used. It will break everything down. I’m sure there are more online as well. You shouldn’t really use a basic recipe and rely on those food stats because not everything is the same and could change your numbers immensely even with a brand change of the same item. Just a suggestion, but really it’s better to rely on your own info than something posted on the web.

  12. If I use frozen sweet potatoes and frozen veggies, should I just keep an eye on the cooking time? I am making this for a big family dinner. Everyone is going to love it!

    1. Yes, you can but as you mentioned, it will take a little longer to bake so I would just keep an eye on the baking time to ensure they’re fully cooked through.

    Made this last night… reduced the broccoli and sweet potato a bit to add some patty pan squash, reduced the oil, used Italian seasoning, and Amylu Andouille pre-cooked chicken sausage, and served it with cooked quinoa topped with a little Cholupa hot sauce. Delicious

    1. amber, i’m not the creator/writer, but wanted to help if i can. perhaps your sheet pan was too crowded? a crowded sheet pan will steam the food versus browning it. i usually split my sheet pan meals into two pans, with one on each rack. i rotate the racks mid-way through cooking. i hope this might help you with future sheet pan meals.

    1. Hi Kelly. I’m not the OP, however, I’ve been making a version of this for so long… did you use an air fryer for 20 minutes, or did you put the pan in the oven at 400* for 20 minutes? I don’t have an air fryer so I just default to my oven.. I cook my version of this recipe at 425*-450* for 30-45 minutes… a bit longer, a lot of times, because I like for my veggies to be on the crispier and al dente side of things.. I am not an expert or anything, I just thought I’d put in my 2 cents. 😊

  24. I have made This several times! I use cajun SEASONING and garlic, yellow and orange PEPPERs, zucchini, broccoli, and beef smoked sausage. And Then i make HOMEMADE mashed POTATOES without skins to put under. You can also add either balsamic vinaigrette or an Italian to add if you like to make it saucy.
    But besides the point, this is a PHENOMENAL recipe and i highly recommended it. Enjoy!

          1. There’s no need to be rude, Helena. The ingredients are basic so you can look up the nutritional info for yourself. Since they vary depending how much you eat or what your choice of meat & veggies is, it’s unreasonable to expect Layla to provide these.

          2. Helena, Plug the ingredients/quantities you use into a nutrition app and divide the results by the number of servings you use. Not that difficult.

          3. Yes we will use our psychic powers and predict what sausage you are using.

            Honestly if you don’t know enough about nutrition to know why it isn’t provided then I would wonder what the heck you are using it for. Counting macros based on a recipe using ingredients you didn’t use isn’t going to give you accurate info.

  26. This is a great recipe. The one note I’d make is that it vastly underestimates cook time. In reality, to get things golden and caramelized, plan for ~40-45 minutes bake time (flipping several occasions throughout).

    1. i cannot agree more. It definitely takes longer than 20 to cook the sweet potatoes. I even diced them very small.

  34. I made this last night for my family and they loved it! Even my 15 year old stepson liked it (he’s an exceptionally amazing stepson but can be a little picky)! We always ask “the question” to see if a new recipe is good or not. I ask “can I make it again?” And the answer was a definite YES! I used a steakhouse seasoning blend instead of Italian seasoning and omitted the salt and garlic since the blend I used already had both. It was so good and I felt that my family was getting something good for them.
