In case you haven’t heard, Indian food is amazing! The jam packed flavors, the spices, bread and oh, of course.. the all time classic, chicken curry. It’s a super hearty and tangy dish filled with a huge amount of flavor. Like, tons of flavor!
Obviously, everyone wants to try exotic flavors at some point in their life; it may take some of us longer than others, but at some point in our lives we wake up and say ” Hey I’m going to have Indian food today”.
A long time ago I never made chicken curry at home because for some weird reason, I assumed they only make chicken curry in Indian restaurants… Silly me. Maybe it’s because that’s the only place I ever seen it. When we lived in Brooklyn, there were Indian restaurants all over and if you were walking down 5th ave there’s no way you can walk by an Indian restaurant without stopping to either inhale the amazing aroma or peek through the window and see what all the fuss is about.
If this is your first time making Indian food don’t worry. This recipe is super easy and does not require a a bunch of steps. All you have to do is processor all the spices, tomato sauce, yogurt and water in the food processor; cook the chicken and onions and than mix it all together and let it simmer for 25 minutes.
Easy Chicken Curry
- 2 Cups boneless chicken breasts or thighs cut into chunks
- 2 Tablespoons olive oil
- 2 onions diced about 1.5 cups
- 1/2 cup water
- 1/2 cup plain yogurt or heavy cream
- 1 cup tomato sauce or 2 tablespoons tomato paste
- 4 cloves garlic
- 1 Teaspoon cinnamon or 1cinnamon stick
- 1 Teaspoon dry chili
- 1 Teaspoon turmeric powder
- 1 Teaspoon salt
- 5 Cardamom pods or 1/4 teaspoon nutmeg
- 5 whole cloves
- chopped fresh coriander leaves cilantro
Blend spices, garlic, tomato sauce, water and yogurt in the food processor for 1 minute. Pulse a few times in between so the batter is not too runny, set aside.
Sauté onion in oil for 2-3 minutes until they begin to turn golden in color, add chicken pieces, continue cooking till onions are transparent and tender and chicken is reasonably well-cooked.
Pour spice/tomato mixture over the chicken and onions and bring to a boil, stirring well.Simmer, covered, stirring occasionally until chicken is tender for about 25 minutes.Serve hot,garnish with fresh coriander leaves.
