90 Second Microwavable Low Carb Keto BreadIf you’re on a low-carb, paleo or keto diet then you’re going to fall in love with this keto bread recipe. It’s so soft, fluffy and delicious, you’ll find it hard to believe that it’s actually keto. It’s all made in the microwave in just 90 seconds!

This bread is perfect for the mornings when you need a slice of bread to serve with your egg and bacon, for a breakfast or lunch sandwich, or for making grilled cheese. It’s perfectly soft and holds up great, especially when toasted.

For the bowl, I like to use a large ramekin or any small microwave-safe bowl. If you’re making grilled cheese, a small square sandwich size container works great. 90 Second Microwavable Low Carb Keto Bread

To Make Microwave Keto Bread, You will Need:

1 egg

1 Tablespoon butter or oil

3 Tablespoons Almond Flour

1/2 teaspoon baking powder

To make, simply combine all the ingredients in a small bowl and pour into a greased microwave-safe bowl or ramekin. Microwave for 90 seconds. Flip out of the ramekin and slice in half.

To toast: butter a pan or skillet over medium heat and toast the bread until golden and crispy. Alternatively, toast in a toaster.

90 Second Low Carb Keto Bread

Soft and Fluffy low carb keto bread made in the microwave in just 90 seconds. Use coconut or almond flour, butter or oil!

Ingredients 

  • 3 tablespoons almond flour, or 1 tablespoon coconut flour
  • 1 tablespoon butter, or oil
  • 1 medium/large egg
  • 1/2 teaspoon double acting baking powder

Instructions 

  • Melt butter in a microwave-safe bowl or ramekin. Add the almond flour, egg and baking powder to the butter. Beat with a fork until completely mix.
  • Microwave for about 90 seconds, until firm. Run a knife along the edge and flip over a plate to release. Slice in half, then toast in the toaster or in a skillet. 
  • To Bake: Pre-heat oven to 375F. Bake in a ramekin for 10-12 minutes or until cooked through.

  3. My almond flour said 4 carbs per 2 tablespoons and my coconut flour said the same. How does the bread have only 2 net carbs? I hope it does because I really like it!

    1. To get “net” carbs you have to subtract fiber. So I’m guessing your almond flour has about 3 grams of fiber per 2 tables, something like that?

  4. I recently started a low carb diet and have been making cloud bread. This provides nice variety. I love that has baking powder in it and gets a rise. I used egg beaters instead of an egg and it came out fine. It totally satisfy the desire for something bread like. I may try a pinch of salt in it next time.

  7. My first attempt at keto—sorry, may need to acquire a taste for this or do a little tweaking—maybe add a pinch of sweetener? It was a little dry and grainy and eggy; but what I’m mainly wondering is the calorie count—shouldnt it be about 292?

    1. Right?? The calories are way, way off. One egg is about 70 calories; 3 Tbs of almond flour is about 180 calories; 1 Tbs olive oil is about 120 calories. That’s about 370 calories, not 220. They really gotta update this. The recipe is tasty for sure, though!

  17. Mine came out really fluffy. I’m glad that I have a wide slot toaster because slice it half they just fit. Toasted on setting 2.5 and it was perfect! Also, one is surprisingly filling. I thought I was going to have to make another one, but found that I didn’t need to. Can’t wait to try for a slider or a deli meat sandwich.

  18. Great recipe! I tried it once with almond flour and once with coconut flour. The coconut flour tasted much better but easily crumbled. The almond flour stayed together great but needed some seasoning.

    1. I use 1 Tbsp of coconut flour plus 2 Tbsp Almond flour . I love this recipe, this is the only bread I eat. If I’m craving sweets,. I warm 1/2 slice of keto bread in microwave, put a handful of frozen blue berries in microwave to UN thaw, put them on the keto bread , the juice soaks up in the bread . I spray with Reddi Whip & it satisfies my hunger for something sweet. It’s delicious. You can als use strawberries👍

    1. I make them up the night before. Found that cooking them in the oven tasted a lot better but they stick. This time I mixed everything together in a bowl, sprayed the ramekins with cooking spray then baked. Game Changer!

  22. I love this his bread. For a cinnamon toast version, add 1/2 tsp cinnamon to the mix. French toast flavor? Add 1 tablespoon of Walden Farms Maple syrup to your mix. Your bread will be soft and moist. Awesome in the toaster.
