The best soft and fluffy low-carb Keto bread made with almond flour in the microwave in just 90 seconds. It’s great for sandwiches, grilled cheese, with butter and much more!

This bread is perfect for the mornings when you need a slice of bread to serve with your egg and bacon, for a breakfast or lunch sandwich, or for making grilled cheese. It’s perfectly soft and holds up great, especially when toasted.
For the bowl, I like to use a large ramekin or any small microwave-safe bowl. If you’re making grilled cheese, a small square sandwich size container works great.
To Make Microwave Keto Bread, You will Need:
1 egg
1 Tablespoon butter or oil
3 Tablespoons Almond Flour
1/2 teaspoon baking powder
To make, simply combine all the ingredients in a small bowl and pour into a greased microwave-safe bowl or ramekin. Microwave for 90 seconds. Flip out of the ramekin and slice in half.
To toast: butter a pan or skillet over medium heat and toast the bread until golden and crispy. Alternatively, toast in a toaster.

90 Second Low Carb Keto Bread
Ingredients
- 3 tablespoons almond flour, or 1 tablespoon coconut flour
- 1 tablespoon butter, or oil
- 1 medium/large egg
- 1/2 teaspoon double acting baking powder
Instructions
- Melt butter in a microwave-safe bowl or ramekin. Add the almond flour, egg and baking powder to the butter. Beat with a fork until completely mix.
- Microwave for about 90 seconds, until firm. Run a knife along the edge and flip over a plate to release. Slice in half, then toast in the toaster or in a skillet.
- To Bake: Pre-heat oven to 375F. Bake in a ramekin for 10-12 minutes or until cooked through.

Can the batter be made ahead of time? I’m thinking the oil will harden if kept in the fridge. Granted it will soften at room temp.

Can i just say ~ yum!! This was fantastic. Just what I needed after cutting regular bread.
This works great in the 4 INCH mini waffle maker. I pour half the recipe on the hot waffle iron, cook for 4 minutes, repeat with the second half of the recipe and you have 2 slices of toasted bread (with fancy waffle design!) For a delicious sandwich. I make several batches ahead And put in fridge. I like the taste of these better than the just egg and cheese “chaffles” that are all the low carb rage now.

It was delicious but about 100 calories more than you posted, 2 more carb grams, 7 more protein grams and 2 more fat grams. I used a different almond flour but the label was very close to yours.
When I added up the ingredients for the 90 second keto bread it came TO 309 calories, 6 g carbs, 11 g protein and 29 fat grams. How did you get less? I compared the labels of your almond flour to mine and they were pretty close so cannot figure this out.

You probably need to take it out of the microwave sooner, your microwave might be higher power. The longer is there the dryer and harder it will get.
I love this, made fpur time already, each time I have change it alittle, adding salt and also cheddar cheese, I used butter instead of oil today, and a small egg, toasted is delish! works great in waffle iron too!

The 90 sec Keto friendly bread is great IF YOU ADD I PACKET OF STEVIA AND THEN SLICE AND TOAST a bit. That gets rid of the eggy texture!
INTERESTING. I USED EGG WHITES (3t = 1 EGG). OVERALL A FAIRLY EGGY TASTE. wILL TRY ADDING NOOCH NEXT TIME PER ANOTHER REVIEWER’S SUGGESTION. tASTED BOTH HOT OUT OF THE MICROWAVE AND TOASTED. toasted WAS NICER.

last time i made this, instead of using almond flour, I substituted 2 tablespoons of finely ground sunflower seeds with 1 tablespoon of flax meal; and coconut oil for the butter; then toasted.

This is good – ESPECIALLY when grilled in butter. However, when i enter the recipe in my Carb Manager app, it comes up as 3 net carbs, not 2. I wonder why that is?

I made this and then smothered one side with tuna salad and slices of avocado. Then my bf and i split the other half with some cream cheese on it – only one net carb each!

I lOve this recipe! I use a chia egg instead of real egg (as i am vegan.). Iโve also added everything but thE bagel seasoning or rosemary/sea salt. So delicious. Sometimes i will cook for only 60 seconds if i want it a bit Softer.
I have made This 3 times now, great sub for gluten bread.
I use MCT oil in place of butter, and just mix it all up in my ramekin, pop it in the microwave. Today i added my mixture of Turmeric, ginger and pepper for a little cancer fighting BOOST

I haven’t tried the recipe yet, but I have a question. Would I be able to substitute Coconut or cassava flour for the almond flour? the last time I ate almonds I though I would die from the pain in my gut, so i’m trying to avoid that again. Would I use the same 1:1 ratio?

Me again. I’ve used this recipe dozens of TIMES with varying results. I wonder if it’s because you are using volumes (tbspn, tspn) instead of weights (grams/ozs). Did you realise that a metric tbspn is different to an imperial tbspb?

I waited awhile to try this, certain it would be blah but decided to give it a go. I did add a pinch of salt and I used Brummel and brown butter, made with yogurt, as it lowered the fat and calories. toasted and spread some sugar free strawberry preserves. really good! texture took a bit to get used to but so excited to be able to eat bread! not on keto but recently diagnosed as diabetic so bread is a nono bc of all the carbs.
This is totally my fault for not reading through the whole post first but I just thought i’d mention that you didn’t say anything about an egg in the first part of the post where you list the ingredients. I know it’s listed in the actual printable reicpe, but of course I was so excited, I didn’t read that far down.
The leavening does that. Try using 50/50 baking soda to baking powder. I do that now with all keto baking and works and tastes better.
I originally tried this recipe using baking soda vs powder, huge MISTAKE. It made the bread extremely bitter and DISSATISFYING. I was convinced it wasn’t great at all, until I went grocery SHOPPING, and bought baking poweder and GAVE it a second try. Man, I’m glad I did! It was delicious!

I add 1 TSP everything bagel spice AND 1/2 TSP BASIL . I MAKE IT IN MY SOUP MUG, WHEN IT’S COOKED I SLICE IT IN HALF AND PUT IT IN THE TOASTER AND PUT NON SWEETENED APPLESAUCE ON IT . lOVE IT .

Are you using this recipe for a keto diet? I haven’t tried this bread without eggs because most keto recipes consist of eggs but I would suggest trying it out with a flax egg and see how that works out.

I Would caution everyone to calculate your own nutrition values. Made by recipe, with bobโs red mill alMond flour, this is 7 net carbs for me. Luckily itโs breakfast so it hasnโT screwed up my keto today.

I tried your recipe and it was good but eggy. So i exchanged the egg for two egg whites and then i toasted the bread. It did not taste like eggs and it was delicious.

i made 4x the recipe and put it ina plastic storage container to get a loaf. Microwaved for 3 min. Came out easily and was good consistency when sliced. Havent tasTed yet because it is for lunch bu smells and looks just like the 90 sec versioN which i tried and loved yeSterday.
I am usually skeptical about any bread products that I don’t buy in a store. (OK, I am a lousy BAKEr because I modify stuff out of laziness ) I tried this because I can’t stay away from bread and desperately need to loose weight with low carbs. ALSO IF YOU USE An XTRA LARGE EGG YOU NEED TO ADD MORE ALMOND FLOUR TO MATCH THE CONSISTENCY IN THE VIDE. I microwaved and will also try baking in my toaster oven.
