It’s officially Fall and the smell of pumpkin, cinnamon, and all your favorite fall flavors is in the air. This is my favorite time of the year to pull out my winter sweaters and cozy up indoors.
With colder weather comes lots of cooking hearty comforting soups. From pumpkin to broccoli, chicken, and just about everything in between, soups make the best warm and comforting dinner!
Tips for Making Perfect Soup
Sauté Your Aromatics First: Although you can simmer aromatics directly in your soup, sautéing aromatic vegetables such as onion and garlic can drastically enhance the flavor of your soup. I also like to sautee the spices for a few seconds as well. This will elevate your soup’s overall flavor and add depth and warmth.
Make Soup Creamy Without Adding Cream: You can still enjoy soup without adding creams. Beans, well-cooked starches such as potatoes and rice, or nuts can give your soup a naturally creamy consistency. To make a soup creamy, simply puree half or all of your soup in a blender until smooth and creamy.
Bite-sized veggies work best: Chop all of your vegetables a similar size to ensure they all cook at the same time and are also easier to eat. I like to use this veggie chopper to chop everything that goes into the soup. This will save you a ton of time and cleanup.
Add herbs towards the end: The best way to instantly add a fresh kick to soup is to add a good handful of fresh herbs just before turning off the heat. This will maintain the color of the herbs but also add so much fresh flavor.
How to Store Soup
Transfer any leftover soup to an airtight container and store in the fridge for up to 4-5 days. You can reheat it in the microwave or on the stovetop in a small saucepan.
To freeze: Let the soup completely cool and then transfer it to a freezer-safe container (or multiple containers). Freeze for up to 2 months. To enjoy, let the soup thaw in the refrigerator, then heat the soup in the microwave or on the stovetop.
