To make rice and broccoli

To make cheesy sauce


  • Preheat the oven to 350 degrees F. Grease a 9X13 casserole dish and keep it aside.

To cook chicken

  • To a bowl with chicken, cubes combine parsley, Italian seasoning, pepper, and salt.
  • Heat a heavy bottom pot with butter. Once the butter has melted add in the seasoned chicken and cook for 5-7 minutes
  • Once done remove the chicken to a separate plate.

To cook rice and broccoli

  • To the same heavy bottom, pot add the chicken broth and rice. Bring it to boil and reduce the flame and cook until the rice is 75% done.
  • Add in the broccoli florets and cook along with the rice for 5 more minutes.
  • Turn off the heat, add the cooked chicken to it and keep the pot aside undisturbed.

To make sauce

  • Heat a medium-sized pot with butter. Add garlic and onion; cook until the onion turns translucent.
  • Add flour, cayenne pepper, paprika  and stir it for a minute. Pour the milk slowly, whisk until everything well combined.
  • The sauce will turn thick and smooth. Now add the cream cheese and 1 cup sharp cheddar cheese. Check for salt and remove the sauce from flame.

Assembling the casserole

  • Pour the cheesy sauce over the rice and broccoli pot with the chicken. Combine everything together.
  • Add them to the prepared casserole dish and top with the remaining cheese.
  • Bake for 20 minutes. Increase the oven temperature to high and “Broil” for 4-5 minutes until golden cheesy crust is formed on top.
  • Let it cool for 5 minutes before serving the casserole.
