Although I’m not strictly following the keto diet because carbs always seem to find a way onto my plate, I feel so much better eating low-carb. I’ve lost a couple of pounds over the last few weeks so that’s a huge plus for me.

If you are on a low-carb or keto diet, trying to lose weight, or just want a healthy protein packed dinner, you’re going to love this cream cheese and spinach stuffed chicken. The chicken is not breaded and cooked in just a little bit of olive oil. You can use fresh or frozen spinach but I recommend fresh spinach that has bee thinly sliced. Instructions 

  • To Make filling:In a medium bowl, combine spinach, cream cheese, parmesan cheese, mozzarella cheese, garlic, and salt + pepper until fully combined.

  • To Butterfly your chicken breasts: lay them flat on a sturdy surface. Place one hand on top to hold it in place and then slice 3/4 of the way through the chicken breast (be careful not to slice all the way through).

  • To Stuff the Chicken: Season the outside of the chicken with chili powder, Italian seasoning, salt, and pepper. Spoon 1/4 of cheese mixture into the middle of the cut chicken breasts and fold the chicken so the cream cheese is sealed inside. Use toothpicks to secure chicken if desired.

  • To Cook: Heat a non-stick skillet on medium high and add 1 tablespoon olive oil. Cook the chicken, covering the pan with a lid, for about 9-10 minutes per side or until the chicken is cooked through.

  1. I followed the recipe a little. I added jalapeños to the mixture and stuffed 3 short stalks of asparagus inside with the mixture and pinned it down with tooth picks. Hoping it turns out well. I took the remaining asparagus tips, chopped them up and added more cream cheese and cheeses to the left over mixture to make a hot dip. I will follow up. I can’t wait to try it.

    1. OMG make this recipe!! I am a newb when it Comes to cooking but this recipe is so easy, yummy, AND keto like what more could you ask for?? The changes I made were:

      – I seasoned breast with garlic powder, onion powder, salt, pepper, olive oil, paprika and red chili powder (I like to add as much flavour as I can LOL)
      -in the spinach mix I added some crushed chili flakes (TRUST ME, DO THIS)
      -and instead of frying it fully, I fried it for a few mins on each side then I baked it in the toaster oven covered with foil for 25 min (just because my chicken breast was on the larger side so I wanted to make sure it was fully cooked)

      It turned out soooo juicy and good, just did one chicken breast as a trial run and I will definitely make more. It took me 30 minutes to prep so if you’re a college student like me this is such an easy recipe and it’s so quick with minimal clean up. My favourite restaurant makes a mean stuffed chicken breast and this was SO MUCH BETTER! Have this with a nice side salad and you have yourself a delicious and healthy dinner!

  12. In just had to post and say thanks for sharing this delicious easy recipie!! It was a hit with my entire family. My teens loved it and even went back for another SERVING. Only thing I did different was season and BROWn the chicken on each side, layered a bag of spinach in casserole dish, drizzled with olive oil. Then I placed chicken on bed Of Spinach and stuffed with filling. The remaining filling I mixed the juices from skillet I browned chicken in and drizzled it between the meat and on top of bed of spinach. It baked well all together and we had an additional healthy serving of creamy spinach!! Will surely add this dish into my meal rotation.

    1. Hi, I did bake in oven because the chicken breast were so thick. I did season and brown in skillet to get the crust first, then I stuffed and baked in casserole dish. About 30 min on 350 degrees.

    In fact, to make it a true keto, you probably want to use full fat everything and maybe even add some bacon 🙂

  24. This Is great. Even If filling runs out of the chicken while cOoking it doesn’t mAtTEr- it nicely scoops up when removing the chicken frOm the skillet. Toothpicks are very helpful. I find 8 minutes cooking each side Is plentY. The kitchen smells heavenly when cooking….

  25. Um. I’m not sure your nutrition information is correct for this. It says one serving has 3 grams of protein, and just a chicken breast with no cheese or anything has at least ten times that amount. Might want to revise your chart.
