Creamy Garlic Parmesan Sun-dried Tomato Chicken

A few years ago I shared my favorite garlic parmesan chicken and today I’m sharing this sun-dried tomato version of it. Sun-dried tomato, garlic, and parmesan make the BEST cream sauce and with the addition of skillet grilled chicken, you’ve got yourself a dish that is to die for!

The trick to making this chicken super flavorful is using lots of garlic. I usually opt in for at least 3-4 cloves but if you’re not a fan of garlic I suggest using at least 2 cloves. For the base, I like to use heavy cream (great keto option) but half & half or substituting half the heavy cream with chicken broth or water will also work. I also like to add in a cup or two or baby spinach to the sauce for some added color and texture but that’s completely optional.

To serve: You can add 2-3 cups of cooked pasta into the saucepan and mix it through with the sauce for a complete “one pan” meal or serve the chicken on top of the pasta.

For low carb or keto: Steam zucchini noodles in the microwave for 2 minutes on high and serve the chicken on the zucchini noodles. You can also serve the chicken with a side of steamed vegetables or greens.

Creamy Sun-dried Tomato Chicken

Ingredients 

Instructions 

  • Pound the chicken thin using a rolling pin or cut horizontally in half to about ½ inch thickness and season with salt and pepper. 
  • Melt 1 tablespoon butter or olive oil in a large pan over medium-high heat, and add chicken and sear on both sides for 4-5 minutes on each side. Remove the chicken from the pan and set aside.
  • Reduce the heat and remaining 1 tablespoon butter to the same pan.  Add garlic and saute for 30 seconds or until garlic begins to brown; Add sundried tomatoes, spinach, heavy cream, parmesan cheese, and mix through. 
  • Return chicken to the pan and simmer for another minute and remove from heat. Serve immediately with pasta, zucchini noodles, steamed vegetables, salad or rice. 

Notes

For a lighter saucesub ½ cup heavy cream with chicken broth or half & half.

    1. use half coconut cream (from jar or can), and half coconut milk for a dairy free version.

  6. This recipe is delicious, thank you! However, how could one serving possibly have only 4 g of protein? One serving has at least six ounces of chicken, which has 52.6 g of protein! And that’s only the chicken. Can you please revise your nutritional info, or tell me why it’s only 4 g?

  7. Made this today but used bone-in chicken thighs (which I cooked first then added to sauce at the end). Added peas, but otherwise pretty much stayed to the instructions….and it was AMAZING!!!!

  9. Very good we had breaded eggplant with it and the sauce was divine over the eggplant. I also used some smoked sundried tomatoes and deglazed the pan with a little white wine and chicken stock, then added the cream and spinach.

  16. Don’t know why but my chicken came out very bland tasting
    I used half and half instead of heavy cream, followed the rest of the recipe as it was.
    Any suggestions or thoughts on why ?

    1. I used instead of butter, and a little olive oil and used heavy cream instead if half and half.it was so creamy and super flavorful! Best chicken I have ever had, hands down!

  18. This was a fast and easy recipe. I used chicken tenders to avoid the pounding. I probably doubled the garlic, as I usually do in any recipe. Used pre-washed baby spinach and chopped it pretty good. Used half and half instead of the heavy cream just because I had it on hand and didn’t want it to expire. And then added the 1/4 cup of good chardonnay that I was drinking as I made the recipe. Oh, and threw in leftover pre-cooked pasta from last night’s dinner. yum!

  19. i had some heavy whipping cream to use up and came across this recipe. it took me about 50 minutes to make including prep. but it was very simple and in one pan which i love. i added more garlic, tomatos, and spinach cause i wanted more veggies but it was sooo yummy

  20. I had a jar of sundried tomatoes I wanted to use so I tried your recipe. I DIDN’T have heavy whipping cream so I SUBSTITUTED alfredo sauce from a jar for the cereal and parmesan. Turned out great, everybody loved it!
