A few months ago I began experimenting with cauliflower. It’s super healthy and is packed with rich nutrients, vitamins, indole-3-carbinol, and sulforaphane which help prevent obesity and diabetes.

One of my favorite ways of cooking cauliflower is using it to replace carbs in dishes my kids love. Now being middle e eastern we have rice EVERY single day. Like we seriously can not go a day without having rice, bread or some sort of starch on the side so cauliflower makes a huge difference in our diet.

In 2014 I shared my cauliflower crust pizza and cauliflower “tater” tots and they were a huge hit, so today I decided to share my cauliflower rice recipe. Guys I seriously can not stress how easy it is to make make this “rice” and how good it is!

Now you can enjoy your favorite meals without feeling guilty that you’ve just ate a ton of carbs. This rice can used as a side, as fried rice, as a stuffing in recipes or simply alone with ketchup or hot sauce.

How To Make Cauliflower Rice (Quick, Healthy, Low-Carb, Paleo)

Ingredients 

  • 1 small head cauliflower, cut into florets
  • 1 tablespoon oil
  • 1 clove of garlic, minced (optional)
  • 1/2 teaspoon salt

Instructions 

  • Rice the cauliflower by grating it on the larger holes on a grated or in a food processor.

  • Heat the oil in a large pan or pot over medium-high heat; add garlic and stir for less than 1 minute then add the cauliflower and cook, stirring occasionally, until the cauliflower rice is tender and slightly golden brown, about 6-9 minutes.

  1. Just want to know, I make cauliflower Tice stir fry with zucchini, green pepper and sausage patty I eat 1 cop twice daily and one tuna pouch thus is all I eat. I’ve lost weight, but then it stopped now irs inches. Why has weight loss stopped

  4. Very good! I did add chicken bouillon to add some flavor along with garlic powder and extra pepper. To each their own but it was very easy to make! Will be adding as a regular side dish

  5. After it’s riced then cooked, can you freeze it? Or freeze before cooking? I’ve been buying it in bags but this looks like it could be cheaper!

    1. I like to freeze the cauliflower before cooking in zip seal bags and steam right out of the freezer!

  6. Ok, so I was roasting cauliflower the other night, and literally was thinking to myself how I need to figure out to make rice with it. I’ve seen it a couple places, and have always been so intrigued! Making this tonight!
