Is it too soon to be grilling? I know it’s only april but I LOVE grilling year round. During the winter, I usually grill indoor on my stove top grill because grilling meat is so easy and healthy too.
This is my family’s go to grilled chicken breast recipe. Sometimes we dice up the chicken and make it into chicken kababs or cook the chicken in a pan and use the chicken in all different types of dishes.
I used these chicken breasts to make mediterranean inspired chicken rice bowls, which I will be posting in the next few days.
- 4 boneless skinless chicken breast halves
- 3 tablespoons lemon juice
- 3 tablespoons olive oil
- 3 tablespoons chopped fresh parsley
- 3 garlic clove crushed in garlic press or finely chopped
- 1 teaspoon paprika
- 1 ⁄2 teaspoon dried oregano
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
- Combine lemon juice, olive oil, parsley, garlic, paprika, and oregano in large plastic food storage bag.
- Pierce chicken with fork several times and sprinkle with salt and pepper. Add to bag and coat with dressing, marinate 20 minutes or up to two days in the fridge.
- Remove chicken from bag. Grill or broil for about 5-6 minutes per side. Or, cook in a grill pan over medium-high heat, 5 to 6 minutes per side, or until cooked through.
This recipe is easy and the chicken tasted amazing! No need for dipping sauce. This is my new go-to chicken marinade/seasoning. My whole family loved it! I would definitely recommend

Can substitute lemon juice with lime juice?
I love this chicken so much I make it at least 7 to 10 times a month.
Can you confirm the amount of dried oregano in this recipe? I cannot tell if it should be 1/2 teaspoon or 1 1/2 teaspoon? The ingredient list image is a bit deceiving.
It is probably 1/2 teaspoon, as 1 and 1/2 teaspoons 3/2 teaspoons = 1/2 tablespoon, so if it was 1 and 1/2 teaspoons it would just be notated as 1/2 tablespoon.
I made this for the first time today. It was delicious!!! I didn’t have paprika; however, I used Mrs. Dash Chipotle seasoning. Worked perfectly. Marinated overnight. The breasts were flavorful all of the way through. I will definitely make this again.
Excellent result and very quick and easy. I’ve often found chicken breasts can turn out dry and on the tough side. These were moist and delicious. Husband loved them.

I would like to freeze my chicken breasts in the marinade to save a step from defrosting to grilling. Has anyone tried this?

The whole family really enjoyed this chicken dish. It was flavorful and juicy. I used dried parsley as a replacement for fresh, and left out the paprika, both based on what I had on hand. We grilled it on medium high. We will definitely make this again.

This marinade is outstanding! I cut the chicken up into 1 – 2″ pieces and then broiled it. I served it with a side of ratatouille vegetables and it was perfect. Will definitely be making it again.
This is so amazing and delicious! So easy too! I don’t have a grill or a grilling pan so I grilled the chicken breast with my panini maker and got great results!

I would bake at 425F for about 20 minutes.
Couldn’t recommend this enough!!! Cooking it on stoveto in a skillet was super easy and delicious! The first non-dry chicken breast I’ve had in awhile.

Such a great marinade for chicken. It’s very flavorful and filling while also healthy. I used this to make a gyro and it was only 550 calories. I will be using this recipe from now on.

Wow, this is the best we have ever tasted!!!! We used it on breasts on the bone. We inserted a thin slice of lemon under the skin. We only had time to marinate for 20 minutes. This is a new go to recipe for us. Honestly we devoured it and wanted more. So very good!

So is this four pounds of meat?
No, just 1 pound of chicken or about 2 chicken breasts sliced in half horizontally to make them thin thus the 4 halves. Sorry for the confusion!
Possibly the best chicken recipe i’ve ever used!! Chicken was SO moist even though I had to cut into it multiple times to see if it was cooked entirely. This one’s Going In the permanent record!

I didn’t have parsley so I added a teaspoon of dried basil. grilled for 8 minutes on each side after reading comments figured it would be best. perfection so good! sliced 1/4″ thick slices and laid on top a Caesar salad. yum

Yes, you can substitute dry parsley. I would use one teaspoon dry parsley.

This was GREAT! It’s going into my top 20! I cut the breasts in half and took off the tenders. I still felt the interior needed to be a little more cooked. I think the improved moisture increases the cooking time.

I put four big chicken breasts in the marinade for about 5 hours. Then I grilled them with red peppers and zucchini.
It took longer than directed, and I had to cut them up into smaller pieces. They were good, but I think they should be complimented with a yogurt sauce. They went well with my tabouleh salad.
Next time I would cut them into smaller pieces before I put them in the marinade, and make tzasiki sauce to put on top or put it in a salad.
I made the Mediterranean chicken as tenders (broiled then grilled for a lil’ added char) for my husband last night in a spinach salad & his comment was: “I never want chicken any other way! I could east that chicken every day!!”
