Simple, quick and easy to make. With just 2 ingredients, these pancakes are paleo, gluten-free, dairy free, grain free, and no sugar added. I make the resolution every year but a few weeks in, I give up. This year, I’m thinking of giving the paleo diet a go. My husband has been on the paleo diet a few months now and he’s always raving about it. He’s always whipping up delicious low-carb paleo recipes and I’m always there to help him eat the dishes ☺️

These 2 ingredients banana pancakes are one of his favorites. We’ve made them a few dozen times in the past year and every time we do, my husband says that he can’t believe it’s just eggs and bananas! ????

It’s hard to believe isn’t it. Just an egg and a banana will make these moist and delicious pancakes. They literally take 30 seconds to prep and a another minute to cook. No tricks, I promise ????

2 ingrident banana pancakes (6 of 8)Now, if you’re expecting the classic carb filled pancakes then you will be disappointed. The texture of these pancakes is rather dense and moist unlike regular pancakes. If you’re on a paleo, low carb or trying to lose weight, then you will love these.

Here are some tips to get the perfect result each time you make the pancakes.

  • Because there’s no flour in the pancakes, there’s nothing holding the pancakes together so be sure to keep the pancakes small ( I use 2 tablespoons of batter per pancake)
  • Be careful when flipping the pancakes, it helps to use a thin spatula.
  • Add nuts, chocolate chips or any other toppings after the pancake is on the skillet.

Talking about toppings, feel free to add whatever toppings you wish in the pancakes after you’ve poured the batter into the skillet. We find that nuts and/or chocolate chips go really well in these pancakes. A tablespoon of coco or protein powder is another great option if that’s your thing. If not, these pancakes taste seriously good on their own ????

Ingredients

  • 2 medium ripe banana
  • 2 medium eggs
  • Butter or oil, for the pan

  • Optional extras:
  • ¼ teaspoon baking powder (for fluffy pancakes)
  • ¼ teaspoon vanilla
  • pinch of cinnamon
  • 1 tablespoon cocoa powder or protein powder
  • ½ cup chopped nuts, chocolate chips or fresh berries
  • Syrup for topping

Instructions

  1. Peel the banana and break it up into several big chunks in a bowl. gently mash the bananas into smaller chunks using a fork. Add the eggs to the mashed bananas and stir with the fork until you have a custard like consistency. The batter will be runny and should have a few clumps of bananas. (optional: add ¼ teaspoon baking powder, ¼ teaspoon vanilla, pinch of cinnamon, 1 tablespoon coco-powder)

  2. Heat a griddle over medium heat and Melt a about ¼ teaspoon of butter into the pan. Drop the batter on hot griddle: Drop roughly 2 tablespoons of batter onto the hot griddle. This would be a good time to add the nuts, chocolate chips or berries if desired.

  3. Cook for 1 minutes or until the bottoms look browned and golden when you lift a corner.
  4. Gently flip the pancakes and cook for another minute on the other side.Transfer the cooked pancakes to a serving plate and continue cooking the rest of the batter.

  5. Serve Pancakes warm; they are best when eaten fresh off the griddle and still warm. Serve with maple syrup, honey, or any extra toppings .

    I used one medium banana WITH peel and blended it with one free range egg and one spoon of gluten free flour, with a dash of sea salt. Worked perfectly, fried in coconut oil at low heat. Keep them small.
    Banana peel has many health benefits, including soluble & insoluble fibre (great for your gut).

    Mine were impossible to flip. Realy sweet, but not much like a pancake. It would be easier to grill or saute the bananas, pretty much the same flavor. You do need to keep them small to have a chance of flipping.

    Can these be made ahead and frozen/re-heated? I like do a fair chunk of my weekday food prep on Sundays – for super quick grab ‘n go breakfasts — since I am Not a morning person 😉

    I made these yesterday because I wanted a health “breakfast for dinner” option. They were delicious!!

    I made some plain and some with chocolate chips (some seemed to fall right out when I was flipping them), both were delicious. Next time I am going to try adding in some nuts to add a little crunch to them.

    I never comment on anything but have to on these. So surprisingly delicious! We truly were surprised cuz the 2 ingredients don’t actually sound good. ????
    Doesn’t leave you feeling overly full like flour pancakes.

    I did add cinnamon, vanilla and a Tbsp of ground oats. When on the griddle, I sprinkled crushed walnuts on them

    I don’t normally comment, but these were great. I added a scoop of vanilla protein powder for more protein (bariatric patient, need all that protein.) and tossed it in my ninja for a good consistency. Just a few pulses. Poured into a bowl and finished mixing any powder that didn’t get mixed in well enough. Still had bits of banana though. Cooked only 1 TB at a time and they were perfect. Thanks!

    These seemed easy and quick for a healthy breakfast. Unfortunately I tried making them small, larger, thinner – there was no way to flip them. The bottom was done, sometimes overdone, but since there was nothing holding them together, they just fell apart. And the ones I did manage to finish cooking, did taste like banana omelets.

    Made these this AM. Unsure why anyone is referring to them as “banana omelettes” unless they didn’t follow the recipe at all… ???? Mine came together easily and were a nice consistency. The flavor is very light, but I really enjoyed them with fresh sliced banana on top. If you want sugary pancakes/ are a big sugar water in general, these are no substitute, but for someone who eats lower sugar in general, the natural sweetness of the bananas is very comforting and delicious!

    I loved these. Made a couple tiny changes. Since it was just me I did one egg and one ripe banana.. I then added a pinch of baking powder and a pinch of gluten free flour …also added cinnamon and almond slivers.
    As she mentions a few times in the review replies, you must make them small (like the size of the frozen mini pancakes you can buy) and low (3-4 temp) I had no trouble turning them or having them fall apart. Also did not taste “eggy” at all. I topped with a little butter and another sprinkle of cinnamon.
    * the mixture I made, made about 10 mini pancakes.

    The flavor was great – I have tried making these before with a different ratio. Unfortunately, no matter what I do, the pancakes are a nightmare to flip. My house was smoking like crazy; good thing we just took the alarm down otherwise the fire department would have seen me in my PJ’s and the dog would have freaked. Alas, I am not going to be adding any flour to them; I just need to figure out what I need to do in order to get them flipped.

    These were definitely very eggy in flavor and texture, as a few others mentioned. So, I kept the 1:1 banana to egg ratio, the 1/4 tsp. Baking powder and then added about 1 cup of almond flour, milk to thin the batter a bit, and a little cinnamon…much tastier, still low carb, if your into that, and much more like a pancake!

    I tried this recipe as is, but they weren’t staying together so I added in about 4 TBSP of quinoa flour.. you could probably use any alt. flour. Mind you I made a half batch so the full recipe would need about 8 TBSP!

    My son and I. Had these this morning, I think if my bananas were a bit more ripe they would have tasted better. But overall it was good, kinda like a banana bread pancake and I had no problem flipping, you just need to make sure they are fully cooked before trying to flip. I used large bananas and added baking soda and vanilla. We put some Nutella ontop. I would make again. Definitely with riper pancakes and am going to try some chocolate protein powder next time.

    These were amazing with some tweaking. I used one banana and two eggs, plus 1/4 cup shredded coconut. This helped with the shape issue and added a little extra flavor and cake-like texture, plus it’s still paleo! Delicious with a little nut butter in between 🙂

    These in no way resemble a pancake! Definitely more like scrambled eggs BUT my 3 year old is eating whatever it is so it wasn’t a total bust ????

    Wasn’t sure what to expect, but I Love them! I added the extras such as chopped pecans, cocoa, baking powder, and vanilla. Taste like banana bread. My husband liked them also. Will make again!

    These are a fail in my opinion 🙁

    I uses 2 bananas, 2 eggs, 1/4 tsp baking powder, 1/4 tsp vanilla, and a dash of cinnamon.

    Tastes ok, but like Nikki mentioned earlier – it’s a banana omelette.
    They’re extremely hard to flip, and if you’re craving pancakes – these will not hit the spot.

    I made these with just one banana with two eggs. I put a bit of cinnamon in & vanilla. I used two tsps. of syrup to dip them in. They were PERFECT! a little flat though so next time I want to try a bit of baking powder to help them rise a bit more. I had no issues flipping them either. I’m no expert but I’m wondering if two banana’s is too much. Also making them small and using a thin spatula helps as well.

    Though, only a few turned out for me because I am just no good at getting them to flip, my kids ATE them and that itself is an accomplishment! I have picky easters in my house and this was a great alternative to regular pancakes!!! Thank you 🙂

    Made this today with one banana and one egg. It really didn’t taste very satisfying or similar to pancakes. Maybe I should have added the “optional” ingredients too, but I didn’t have them on hand.

    They tasted great, but mine wouldn’t stick together for anything. Even with a thin spatula, they broke apart. Worked out nicely as a fruity breakfast scramble when I added some blueberries and strawberries, but I likely won’t try this recipe again because its more effort than it promises.

    Had these for breakfast this morning, amazing! Added baking powder, vanilla and cinnamon with some chocolate chips and they were fantastic. Used coconut oil and had no problem flipping them over. New favorite pancakes! ????

    Made these pancakes for dinner tonight after a good workout. I had high hopes for some deliciousness (the photos look tasty). Unfortunately, they were not as good as I had hoped. My wife agreed they were not as delicious as the photos look, and they do not amount to enough for more than a serving for one. I give them a 4 out of 10. They did not taste lousy….just not good.
