Healthy and flavorful. Oven roasted chicken breasts and rainbow veggies are tender & juicy and ready in 15 minutes.
15 Minute Healthy Roasted Chicken and Veggies (One Pan) This is a long time favorite recipe of mine and I can’t believe I haven’t shared it yet. It’s a “one pan” type of dish where you basically place everything in the pan and bake. Minutes later, a hearty and delicious dinner platter is ready. The reason this dish cooks so quickly is because of the chicken is cut into small bite size pieces and the oven temperature. The results are charred veggies and juicy chicken.
This is great when you are hungry but lazy and are on the edge of calling take out. Instead, pop these healthy veggies and chicken in the oven and I assure you, they will be ready before the takeout is supposed to arrive. Plus, they are 1000x healthier and tastier. Serve these veggies with a  side of rice, quinoa, or bread.
15 Minute Healthy Roasted Chicken and Veggies (One Pan) To being, chop the veggies and chicken and place on a small baking sheet. Season with olive oil, salt and pepper,Italiann seasoning, and paprika. Gently combine and bake for 15 minutes. See the video below for more details!

  1. I didn’t have broccoli so I added yellow squash and red plus sweet onion. I also instead of Italian seasoning switched for greek seasoning so I could stuff these in pitas/naan bread with tzatziki and have easy gyros. Totally a great quick dinner. Thanks for the inspo!!!

    1. Kat – love the idea to go greek and add tzatziki!

  5. I also added a 1/4 tsp of garlic, and I was honestly a little surprised how delicious this was for being so easy. It took less than 40 minutes from chopping the veg to finishing the dishes. Thank you very much for this.

  6. It has become a family favourite! It’s so tasty and easy.

  7. I think it takes longer than 5 minutes to prep with all of the chopping. It probably took me 15-20 minutes to prep. I subbed liquid coconut oil for the olive oil because I ran out (no taste factor!) Otherwise a fantastic recipe that I will continue to use!

    1. I bought pre-cut veggies and it worked sooo good. Lazy cook right here.

  8. Perfect recipe for a chicken and vegetable pasta bake. Thank you 😋

  9. What kind of Italian seasoning is this asking for, like from where the salad dressing is or where the spices are in the grocery store? It looks really yummy and can’t wait to try it!

  10. What kind of Italian seasoning does this want? Like packets found in the dressing aisle or the spices aisle? I can’t wait to try this!

  11. Can I substitute the salt and use Mrs. Dash instead. I’m trying to lower my sodium intake.

  12. Could I make this on the grill? Maybe in foil? How long do you think it would take?

    1. You can grill on foil and it would take about 15-20 minutes with lid covered.

  13. I just tried this recipe for dinner! I LOVED it! Thank you for sharing. ❤️

  14. How long for 8 chicken breast? I would love to try this but we are a big family.

  19. i look forward to recipes but the chicken was dry. I might need to cut it up more.. will try again. sue

    1. I’m sorry the recipe did not work out for you, Susan. At just 15 minutes baking, I’m not sure how you dried out the chicken. What size did you cut it and did you change anything else in the recipe?

  20. It was easy and delicious. Will make it again

  21. This is the third time I’ve made this. Highly recommend. I added carrot and mushroom this time. Previously, fresh Poblano and yellow squash. DELISH and soooooo easy!!

  22. Made this tonight and it was a hit! Made some alterations. Used about half the zucchini (my family isn’t a huge fan), lots more bell peppers and broccoli. Used a little extra seasonings to accommodate the extra veggies. Served with riced cauliflower for me and pasta for everyone else. Will definitely make again!

  23. Can you use frozen vegetable medley and rotisserie chicken breasts?

    1. I would not recommend it. Rotisserie chicken is already overcooked and it will be very dry and tasteless. Fresh veggies would be much better. Change out the ones you don’t like and add something you do like

    2. I used frozen veggies and they turned out just fine. Was still tasty. 😊

  24. Very good! I will definitely be making this for my family again!

  25. This was DELICIOUS!! I added baby carrots, yellow squash, poblano and red pepper flakes and ate it as is. No rice or noodles. Will definitely make it into the regular rotation!! So easy and very thrifty too!!
