  • Make it vegan: You can make this recipe vegan and dairy free by using coconut cream or a nondairy cream in place of the heavy cream.
  • Frozen spinach: If you don’t have fresh spinach, you can use frozen spinach or even kale. Make sure you allow it to thaw first and then drain.
  • Freezing: I don’t recommend freezing these beans for later, as the texture will not be as good once they are thawed and reheated.

Can I make marry me beans with dry beans?

Yes, but it will take considerably longer to make this recipe. Three quarters of a cup of dry white beans equals approximately one 15-ounce can of beans. Add them to a medium to large bowl. Cover with water (there should be about 3 inches of water above the beans). Let them soak for at least 8 hours or overnight.

Drain and rinse the beans, then add them to a large pot on the stovetop. Cover with water and bring to a boil. Add about 2 teaspoons kosher salt and reduce the heat to medium-low. Let the beans simmer uncovered. The beans will be ready in about 2-3 hours, when they are tender, but not mushy. Add water if they start looking dry while cooking.

Storage recommendations

These beans will keep well in an airtight container in the fridge for up to about 4 days. Reheat in the microwave in 30-second intervals until warm.
