Ingredients needed
This air fryer stuffed chicken recipe is made with simple, inexpensive ingredients. Other than the chicken and cheeses, you probably have everything else in your kitchen. Here’s a note on everything you’ll need:
- Chicken breasts: You’ll want to make sure the chicken breasts are large enough to cut in half and stuff with the filling.
- Oil: Use your preferred oil to rub on the outside of the chicken, which will help it get a nice golden brown exterior and it also helps the seasonings stick to the chicken.
- Spices: A simple combination of Italian seasoning, garlic powder, chili powder, black pepper, and salt adds delicious flavor to the chicken.
For the filling
- Cheese: A mixture of cream cheese, parmesan cheese and mozzarella cheese is super flavorful and has the best melty texture.
- Optional add-in: Choose your own adventure! Add 2 Tablespoons of any of the following: chopped sun-dried tomatoes, or pesto, or feta, or green chilis, or 1 cup chopped spinach.
How to make this recipe
If you’re intimidated to make stuffed chicken, don’t be! This recipe is super quick and easy to make, yet it looks so impressive! It’s a great meal for those busy, on-the-go nights, but it tastes like you spent all day working in the kitchen!
- Make the filling: Preheat air fryer to 375ºF. In a small bowl, combine the oil and seasoning and set aside. In another bowl, make the filling by combining the cream cheese, parmesan, mozzarella, and 2 tablespoons of your favorite add-in.
- Cut the chicken: Lay the chicken breasts flat on a cutting board. Place one hand on top to hold in place and then slice 3/4 of the way through the chicken breast (be careful not to slice all the way through).
- Fill the chicken: Spoon 1/4 of the cheese mixture into the middle of each chicken breast and fold so that the cream cheese mixture is sealed inside. Brush all sides of the chicken breasts with oil/seasoning mixture.
- Cook: Transfer to the air fryer basket and cook for 20 minutes, flipping halfway through or until cooked and the internal temperature reaches 165ºF.
Expert tips
- Chicken breast size: Make sure that your chicken breasts are all similar in size, so that they will cook evenly and at the same rate.
- Cream cheese: Be sure to allow your cream cheese to soften to room temperature, so that it’s easy to combine with the other cheeses. If you forget to remove it from the fridge ahead of time, simply remove the packaging, place it on a microwave-safe plate and microwave it for 20 to 30 seconds or until it is soft.
- Shredded cheese: If you have the time, freshly grate the parmesan and mozzarella cheese from a block as it will have better flavor and it will melt better than pre-shedded cheese from a bag.
- Preheat the air fryer: It’s best to preheat the air fryer, so it is nice and warm when you put the chicken into the basket. If your air fryer has a preheat button, use that, if not set it at 375 degrees about 3-4 minutes before cooking the stuffed chicken.
- Cutting the chicken: Gently cut the chicken in half to add the filling, and be sure that you don’t cut all the way through to the other side. Having one side closed will help the filling from coming out.
Frequently asked questions
How do you keep cheese from oozing out of stuffed chicken?
Use a very sharp knife and cut just 3/4 of the way through the chicken breast without slicing all the way through. Then, really stuff the cheese all of the way inside. If your chicken is a bit small, and you feel like the cheese might ooze out, feel free to secure the opening with toothpicks.
How to know when chicken breast is done cooking?
Chicken is considered safe to eat when an instant read meat thermometer inserted at the thickest part registers 165°F. However, the internal temperature will rise as the chicken rests. To keep it from becoming dry, we recommend removing it between 155 and 160 degrees F, then let it rest for 5 to 10 minutes.
Can I prep the chicken ahead of time?
Yes! This is a great recipe to make up to 1 day ahead of time. Fully prep the chicken with the spice rub and filling. Store tightly covered in the fridge. Then, when you’re ready to eat, simply pop the chicken into the air fryer.
