
This quick and tasty garlic and parmesan chicken is super easy to make so it’s great for busy weeknights when you just need to whip up something fast. It’s all made in one pan in under 20 minutes. The chicken is first cooked in olive oil and seasoned with just salt and pepper. After the chicken is cooked through, remove it from the pan and add some minced garlic to the same pan. Cook the garlic for no more than 30 seconds just to until it begins to turn golden.
The next step is adding the cream, Italian seasoning, and parmesan cheese. I used light cream but heavy cream will work too! If you’re a fan of spinach like we are, toss in a cup of chopped spinach at this point! Simmer the sauce for a few minutes then return the chicken to the pan. Enjoy this creamy chicken on pasta or with a side of veggies!

Ingredients
- 4 small-medium chicken breasts or 2 large halved
- salt and pepper to taste
- 2 tablespoons olive oil
- 3-4 cloves garlic minced
- 1 cup light cream or heavy cream
- 1 tablespoons Italian seasoning or oregano
- 1/2 cup parmesan cheese grated
- 1 cup spinach chopped (optional)
Instructions
- Season chicken with salt and pepper. Heat olive oil in a large heavy skillet or pan. Add chicken to the pan and cook for 5-6 minute per side or until the outside is golden and the chicken is cooked through (cooking times will vary depending on the thickness of the chicken breasts).
- Remove chicken from the pan, reduce heat to low-medium, and add garlic; stir for 30 seconds. Add the cream, Italian seasoning, and parmesan cheese. Stir to combine. Stir in 1 cup of chopped spinach if desired. Simmer for another 2-3 minutes.
- Return chicken to the pan and simmer for another minute then turn off heat. Spoon sauce over chicken. Serve with pasta or veggies.

Family loved this but I left out Italian seasoning by accident and chose to use half Asiago in place of Parmesan which gave it a fabulous punch. Will definitely make this again!
Sounded good and read all of the great comments… it’s not great, Italian seasoning over powered this dish, would have been better with salt, pepper, and garlic only.

Forgot to mention that I substituted canned coconut milk for the cream and served with rice. Delicious! Didn’t taste like coconut at all.

Instead of spinach I used Baby Bella mushrooms. I fried with the garlic in oil but added 2 tablespoons if butter. This recipe is a keeper for sure and so easy to make! I made spinach ricotta ravioli and the sauce was great on that!

Didn’t substitute anything! Followed the recipe exactly. I just up the servings size to 8. It was sooo delicious! Highly recommend! We like extra sauce so that’s the only thing I will do differently next time, make extra sauce.
It’s amazing how one recipe can be changed so many ways and remain so tasty. I used shrimp, canned coconut milk, goat cheese and threw in broccoli. Delish! It’s the basis for many different meals to come. A little dry white wine didn’t hurt. By the way this is my first post. Wow!

I’ve actually only made this in the crockpot and several times. If you add spinach or anything just wait until the last five minutes or so. I also add chopped tomatoes at this time. Otherwise you can dump everything in the crockpot – I prefer to cook low for 6 hours but you can cook it on high instead. I also prefer to cut the chicken in bite size pieces beforehand.
This was super easy and really delicious!!! Will definitely be one of our weeknight favorites.

EXCELLENT! I was afraid there wouldn’t be enough sauce so I scrambled, made a roux with just 1 Tblsp of flour and a Tblsp of flour, threw in half a cup of chicken stock, and then proceeded with rest of the recipe. Served over egg noodles with roasted carrots on the side. Chicken turned out beautifully moist and there was just enough sauce to nicely coat the chicken and the noodles. LOVE this recipe! Thank you!

To reduce some fat I substituted evaporated milk for the cream and therefore could enjoy the parmesan cheese with less guilt. I used 2 tsp of basil pesto and 1 tsp of dried oregano which worked out very well. The spinach is a must ingredient. Thanks for this great recipe!
