Fresh sliced avocado, coated in crispy panko breadcrumbs and baked to perfection. These avocado fries are incredibly tasty and easy to make and are sure to impress the pickiest eaters.
There’s one thing I never get tired of making and that’s baked veggies. Especially when they replace unhealthy alternatives and taste just as yummy, even not 100x better. Broccoli tots, cauliflower tots, cauliflower pizza crust, are just a few of my favorite healthy dishes to make.
These avocado fries are something else. If you’ve never had them before, this is the perfect time to try them out. They are crispy on the outside and buttery soft on the inside. Dip them in your favorite tangy or spicy dipping sauce and call it a meal!
- 2 large avocados sliced
- Juice of 1/2 lime optional
- Salt & Pepper
- 1/4 cup flour
- 1 egg lightly beaten
- 1 cup panko bread crumbs
- 2 tablespoons oil
- Chipotle dipping sauce
- Pre-heat oven to 400 Degrees F. Pour 1 tablespoon oil in sheet tray or baking dish; set aside.
Squeeze fresh lime juice on avocado slices to preserve their color while baking (this step is optional). Season with salt, pepper. Dredge in flour then dip in egg and coat in panko breadcrumbs. Be sure the avocado slices are coated very well in the panko.
- Place in a single layer on the greased sheet pan. Drizzle with the remaining oil or spray with cooking spray. This will help the avocado slices crisp in the oven.
- bake for 15 minutes or until the avocados are golden and crispy. If desired, more oil can be drizzle while they are baking for additional crispness.
- Serve with my chipotle dipping sauce (get the recipe here) or with ranch, ketchup, or your favorite dip!
Tried these this eve, they were delicious. I did check them 2 minutes early and they were perfect! Dipping sauce went on burger and dogs from the grill. Will make again maybe just thicker slices. It was a win.

Made these and they were delicious! I will be making them again! Even better 2 of my kids ages 8 and 12 liked them. Can’t get much better than that!

Re: panko. I grind up seasoned croutons. It adds a little more flavor and adds a little more oil for crispiness.
Panko is fluffier and lighter than regular breadcrumbs. Find them in the same area in the grocery store. I use them as coating and in meatballs and meatloaf also.
Panko bread crumbs is a Japanese bread crumbs.
You can make them real easy, just bake some bread for regular crumbs spray them with olive oil, then put some Sazon Goya, Italian Seasoning (herbs), and baked it until the bread is real crunchy, let them cool and put them in a food processor and you have your own Panko Bread Crumbs.

Bitter aftertaste might come from either an unripe avocado, or breadcrumbs that have gone stale, or oil that is rancid. Make sure your ingredients are fresh and ripe.

There are bad calories and good calories. You can’t group themeeting into the same category. Don’t count calorie. Cut out processed foods and sugars.
Followed the instruction to a t and they came out very much burned or should I say carbon crispy Lol and I only left them in the oven for 11 minutes ,but the inside was very good and buttery Lol, too much heat I think
I’m sorry this recipe didn’t work out for you. Every oven is different and food cooks at different rates. Maybe next time you can try 10 minutes.

Exactly what I was thinking Betty, I don’t heat any food that contains oil, such as nuts, seeds & avocados etc., as it will do some damage to the nutritional content, I also worry about the oil becoming carcinogenic when cooked on high heat, like baking, frying & toasting, so I only eat those foods raw, which doesn’t mean they can’t be added to a meal, once it’s cooked & cooled a little, sprinkle the oil containing foods (can be ground or chopped) on top, or stir through.

Hi Anonymous, it’s not the food cooked in oil that becomes carcinogenic, it’s the oil when it’s cooked at high heat that becomes carcinogenic, & as some foods such as avocado, nuts & seeds contain oil, I don’t heat those at all, as I think heating any that contains oil must lose it’s beneficial nutrients.
It’s NOT the oil NT THE food that becomes bad when cooked…I’m pretty sure its when the oil has been removed, processed and stands alone that certain oils shouldn’t be heated. I don’t see cooking these fingers being a nutritional disaster….Pringles have that category covered…this is a WAY BETTER choice
Avocado oil has the highest heat tolerance of any oil.
avocado oil in liquid form has a smoke point of 520……one of the top cooking oils. so there would be no worry there

🥑Cayenne Pepper if you want them spicy, plus you can make Special 🥑Infused Olive Oil for a Gourmet Flavor, Bake them until they are Real Crispy and then put it @ the Food Processor and you have the most delicious DIY Panko Bread Crumbs
One tip I will give you is this:
💖Always make sure your avocado is 100% ready to eat other way the flavor will be bitter.
💖Bread Always Fresh
💖Oil must be new
💖 Always spray the avocado with your oil all everywhere and let them rest 5 minutes, this way when you put the flour sticks good.
💖 Season the flour and the eggs for a much better flavor. Remember Avocado do not has a strong flavor, the only seasoning you will taste on this fries is the one you add to the bread, flour & eggs.
💖 Over Spray Very Fast some Oil Before you put The Fries in the oven.
💖 Make sure you preheat the oven @ 500*F and after 10 minutes low it to 350*F Bake Them for 5 minutes, Turn Them and Bake Them for another 5 minutes.
Usually 10 minutes is enough to have very nice Avocado Fries🍟.
💥 REMEMBER: EVERY OVEN IS DIFFERENT, YOU MUST BE ON TOP OF YOUR FRIES THE FIRST FEW TIMES UNTIL YOU GET RIGHT THE TIME & TEMPERATURE FOR YOUR AVOCADO FRIES
💖 You Must Cut Them Thick as a Wedge, Deep Them in Lime Juice for few minutes to keep the right color, as Soonest you remove them put the seasoning and let them absorb the flavors for at least 15 minutes, then preceded to flour, egg, panko, egg, panko, put the tray in the fridge for at least 2 hours, OVERNIGHT is the best way for the Greatest Flavor, Bake Them and Enjoy the Most Flavorful Avocado Fries you can taste in your life.

I tried this but unfortunaly the avocados where then bitter, what did i do wrong? i didnt taste the avocados before i placed then in the oven, but it was 3 different avocados…
Mine were very bitter also & to a shock, I did not enjoy these. Mine were executed as instructed, but they needed something else. So, I sliced some cucumber & cream cheese to pair with these for my guests.

I love these. I bread them then freeze till I am ready to cook them. I make them in my Air Fryer. Crisp and Delicious.
Is there something else besides egg that can be used to baste the avos?
1. Using a food processor, spice grinder, or mortar & pestle, grind the chia seeds into a meal. (If you want to grind more at once, that’s okay. Just remember that chia seeds are full of delicate omega-3 oils which are prone to spoilage when exposed to heat and oxygen. So you’ll want to store your pre-ground chia meal in an airtight container in your freezer for up to a year.)
2. Mix the water and ground chia seed meal in a small bowl. Allow to sit for 5 minutes or so, or until it takes on a goopy texture similar to raw egg yolk
