Just 4 ingredients are all that you need to make this date Snickers recipe! As an added plus, this snack tastes like a Snickers bar but they are made with real, whole-food ingredients. Here’s what you need to make them:

  • Dates: Use Medjool dates because they are larger, soft, and have a delicious caramel-like flavor.
  • Nut butter: Stuff these with peanut butter, almond butter, or whatever nut butter you like best! Feel free to use crunchy or creamy!
  • Nuts: Any chopped nuts work, but we typically use chopped peanuts. You can try almonds, walnuts, cashews, or pecans too!
  • Chocolate: Dark chocolate works best, so these don’t turn out overly sweet. Plus, dark chocolate has a variety of health benefits! However, you can use whatever chocolate you like best.

How to make this recipe

Not only will Snickers stuffed dates satisfy your sweet tooth but they’re also healthier than most desserts and so easy to make! Here’s how:

  1. Stuff: Slice each date along one side and remove the pit. Fill each date with about 1/2 teaspoon of peanut butter and top with a sprinkle of chopped peanuts.
  1. Close with a toothpick: Insert a toothpick into the side of the date to close and secure it. Repeat with the rest of the dates. 
  1. Melt chocolate: Melt chocolate chips in the microwave in 30-second increments, gently stirring to melt (alternatively melt over a double burner).
  1. Dip dates in melted chocolate: Lift the dates using the toothpick and dip them into the chocolate mixture. You can submerge halfway or cover the entire date with chocolate, as desired.
  1. Chill to set: Transfer to a parchment paper lined sheet pan and immediately sprinkle with more chopped nuts. Transfer to the fridge to set for 20-30 minutes.

  • Type of dates to use: We don’t recommend using Deglet Noor dates because they are smaller and firmer than Medjool dates, and don’t work as well to stuff.
  • Remove the pits: You can buy pitted dates or dates with the pits. If your dates have the pit inside, simply split it open and pull out the pit before stuffing.
  • Use toothpicks: Be sure to secure the dates once they’ve been filled with peanut butter and crushed peanuts. This will keep the peanut butter from seeping out and will also make dipping them in melted chocolate much easier! You can remove the toothpicks if you’d like, once they are set.
  • Chill to set: It’s important to chill these in the fridge for at least 20 minutes, so the chocolate sets up nicely and the dates stay stuffed!

How do you soften dates for stuffing?

If you use Medjool dates, you shouldn’t need to soften them before stuffing. This variety of dates is usually plenty soft. However, if you find that your dates are a bit too firm for stuffing, place dates in a bowl with boiling water and let sit for about 10 minutes. Then, drain and pat dry with a paper towel.

Why are Medjool dates soft?

Medjool dates have a very thin skin that you don’t even notice when eating. This skin, though, protects the center of the fruit and keeps it moist.

What can you stuff dates with?

Storage recommendations

  • In the refrigerator: Store stuffed dates in the fridge in an airtight container for up to about 1 month. Once the chocolate is set, you can stack them on top of each other.
  • In the freezer: Place a single layer on a parchment-lined baking sheet and flash freeze for about 30 minutes and until firm. Then, transfer them to an airtight container or a freezer-safe bag. They will keep fresh for up to 3 months. Label the bag with the date!
  • To thaw: Transfer the desired number of dates from the freezer to the fridge to thaw overnight. You can also thaw at room temperature for a few minutes until they are soft enough to eat.
