Pancakes are a must on weekends, They’ve sort of become a tradition in our household. I love my pancakes fluffy and moist and loaded with syrup.
As much as I love eating pancakes I’ve been trying to eat a little healthier these days. I thought this weekend I would try these healthy low-fat whole wheat pancakes instead and see if the family likes them. Drum roll….. They loved them! The pancakes were nice and golden on the outside and super fluffy and moist on the inside.
I’ve tried making pancakes with all kinds of fruits but banana pancakes are still number one! I guess it’s because they are mashed right into the batter so you can taste the bananas in every bite.
There is no butter at all in these pancakes so you can eat without feeling guilty! Instead of using whole milk, I used nonfat milk, which I found made the pancakes much lighter and fluffier anyway.
I mashed the bananas right into the batter, try to use bananas that are really ripe because they tend to blend in much better and are much sweeter.
I also used whole wheat flour instead of white flour, If you don’t have whole wheat flour you can also use white flour and follow the same directions.

Healthy Whole Wheat Banana Pancakes
Ingredients
- 1 cup whole wheat flour
- 1 large egg
- 1 cup nonfat milk
- 2 bananas mashed, about 1 cup
- 1.5 tsp vanilla extract
- 1 ½ tsp baking powder
- ¼ tsp salt
Instructions
- In a small bowl, mash the bananas until they are nice and lumpy, set aside.
In a medium bowl, Whisk flour, baking powder and salt. In a small bowl, whisk the milk, egg and vanilla extract. Add milk mixture to dry ingredients and stir well. Fold in bananas. - Scoop ¼ cup of batter per pancake on to a heated griddle coated with cooking spray, or oil. Allow the pancakes to cook for 2-3 minutes on each side, flipping only once. Turn pancakes when bubbles appear and the edges are golden.

I made these pancakes many times using this recipe, my favorite recipe of all the time! I just wish if you could add metric measures because it’s easier.
Hi! I was wondering if I could substitute the whole wheat flour for rolled oats (not blended). If so, how would that affect the texture of these pancakes?

Can the mixture be frozen?
Do you mean before or after cooking? you can certainly freeze them after they are cooked but I don’t know about freezing the batter.
I have tried many different banana pancake recipes, and this one is by far my favorite! I make them all the time. Easy, flavorful, and not dry. I use 2% milk because that’s usually what I have on hand.

I just tried this recipe with almond milk and it turned out wonderful! I added some blueberries to the pancakes as the cooked as well and it was to die for!!!
I just made these, I used coconut ๐ฅฅ milk and they worked beautifully. The first two I made were too thick and cooked on the outside but not inside so I made the next ones thinner and they were perfect.

i will never buy prepared pancake mix again. I liked that it only makes about 9 small pancakes, alot of the recipes make too much batter for us. The first time i made these i followed the recipe exactly and they were delish. this time i didnt have any milk so i used water instead, it wasnt as good but it worked! Great pancakes! I saw sugar listed in the directions but not in the ingredient list. I winged it with one brown sugar/honey, but I was curious how much you were thinking.
I’ve fixed that error, thanks for pointing that out, May! There’s actually no sugar in the recipe but I must have wrote it while writing the directions because I’m used to adding sugar in my regular pancakes! ENJOY! ๐

Ok, you may have just changed my life. I never thought to mash the bananas and mix into the batter! I’ve just been slicing them and plopping them in. So then I get some banana bites and some plain pancake bites. This is great!
Your going to love them mashed into the batter! I learned to mash them right into the batter when I was on a paleo diet and ate banana pancakes every other day.
