  1. Blend: To a blender, add the cooked chickpeas, chickpea broth, lemon juice, tahini paste, olive oil, garlic, ice cubes, salt & cumin. Blend on high speed until creamy, about 2-3 minutes. If the mixture is too thick, add more chickpea broth or water until desired consistency is reached. 
  1. Plate: To serve, plate desired amount onto the middle of a shallow plate and use the back of a spoon to spread out the hummus and create a swirl in the center. 
  1. Garnish: Drizzle with a generous amount of olive oil and garnish with Aleppo red pepper, paprika, red pepper flakes, and/or finely chopped parsley. Serve immediately with warm pita bread.

  • For extra creaminess: If you have extra time and want your hummus extra creamy, tenderize the chickpeas using baking soda. Rinse and drain the chickpeas, then toss with 1 1/2 teaspoons of baking soda in a microwave-safe bowl. Once coated, microwave for 90 seconds. Next, place the heated chickpeas into a large bowl and cover them with cool water. Gently rub the skins off of the chickpeas using your hands. As you’re removing the skins, drain the water that has the skins in it. Continue until all of the skins are removed. This might take 4-5 changes of cool water. Lastly, follow the instructions as written to make the hummus.
