This bread is perfect for the mornings when you need a slice of bread to serve with your egg and bacon, for a breakfast or lunch sandwich, or for making grilled cheese. It’s perfectly soft and holds up great, especially when toasted.
For the bowl, I like to use a large ramekin or any small microwave-safe bowl. If you’re making grilled cheese, a small square sandwich size container works great.
To Make Microwave Keto Bread, You will Need:
1 egg
1 Tablespoon butter or oil
3 Tablespoons Almond Flour
1/2 teaspoon baking powder
To make, simply combine all the ingredients in a small bowl and pour into a greased microwave-safe bowl or ramekin. Microwave for 90 seconds. Flip out of the ramekin and slice in half.
To toast: butter a pan or skillet over medium heat and toast the bread until golden and crispy. Alternatively, toast in a toaster.
90 Second Low Carb Keto Bread
Ingredients
- 3 tablespoons almond flour, or 1 tablespoon coconut flour
- 1 tablespoon butter, or oil
- 1 medium/large egg
- 1/2 teaspoon double acting baking powder
Instructions
- Melt butter in a microwave-safe bowl or ramekin. Add the almond flour, egg and baking powder to the butter. Beat with a fork until completely mix.
- Microwave for about 90 seconds, until firm. Run a knife along the edge and flip over a plate to release. Slice in half, then toast in the toaster or in a skillet.
- To Bake: Pre-heat oven to 375F. Bake in a ramekin for 10-12 minutes or until cooked through.

Iโve experimented with this recipe a few times. Used different types of flours, such as wheat flour and oat flower. Even used flaxseed meal and it worked well. A few times I added some seasonings ๐ Also, Iโve doubled the recipe and itโs just as easy!
The bread itself is nothing incredible, but it gets the job done for sure. Love the versatility of this recipe the most.

Finally a quick and easy alternative to a traditional English muffin. Hurray!! I added in a little red pepper vinaigrette to the batter to cut down on the egginess, and fried up with melted cheese, arugula and some spicy tuna salad.

More of a savory muffin than bread. Not at all the crusty experience, I look for in bread. If this is the type of bread you are used to, you may be okay with it. I was disappointed that it feels more like cake than bread to me.
Roman, try it either in the oven or do what I do! I microwave mine, pop them out, slice then toast them. I think you will love it! I put cheesy egg and bacon between it.

My almond flour said 4 carbs per 2 tablespoons and my coconut flour said the same. How does the bread have only 2 net carbs? I hope it does because I really like it!
To get “net” carbs you have to subtract fiber. So I’m guessing your almond flour has about 3 grams of fiber per 2 tables, something like that?
I recently started a low carb diet and have been making cloud bread. This provides nice variety. I love that has baking powder in it and gets a rise. I used egg beaters instead of an egg and it came out fine. It totally satisfy the desire for something bread like. I may try a pinch of salt in it next time.

Right?? The calories are way, way off. One egg is about 70 calories; 3 Tbs of almond flour is about 180 calories; 1 Tbs olive oil is about 120 calories. That’s about 370 calories, not 220. They really gotta update this. The recipe is tasty for sure, though!

Mine came out really fluffy. I’m glad that I have a wide slot toaster because slice it half they just fit. Toasted on setting 2.5 and it was perfect! Also, one is surprisingly filling. I thought I was going to have to make another one, but found that I didn’t need to. Can’t wait to try for a slider or a deli meat sandwich.
Great recipe! I tried it once with almond flour and once with coconut flour. The coconut flour tasted much better but easily crumbled. The almond flour stayed together great but needed some seasoning.

I use 1 Tbsp of coconut flour plus 2 Tbsp Almond flour . I love this recipe, this is the only bread I eat. If Iโm craving sweets,. I warm 1/2 slice of keto bread in microwave, put a handful of frozen blue berries in microwave to UN thaw, put them on the keto bread , the juice soaks up in the bread . I spray with Reddi Whip & it satisfies my hunger for something sweet. Itโs delicious. You can als use strawberries๐

I make them up the night before. Found that cooking them in the oven tasted a lot better but they stick. This time I mixed everything together in a bowl, sprayed the ramekins with cooking spray then baked. Game Changer!

I love this his bread. For a cinnamon toast version, add 1/2 tsp cinnamon to the mix. French toast flavor? Add 1 tablespoon of Walden Farms Maple syrup to your mix. Your bread will be soft and moist. Awesome in the toaster.

It DOES say in the recipe, 3tbsp almond OR 1 tbsp coconut.
That said, I made the coconut one last night, I plan to compare both but don’t need to make or eat multiples at once. Used the biggest fattest mug because my ramekins are too small or too big. I wasn’t expecting it to shrink so much if at all since directions say to loosen edges after cooking- mine had a half inch gap all the way around. My big fat mug bread shrunk to smaller than a regular mug size. Idk if that’s the flour type or not, so be forewarned.
You can try subbing with a 1:4 ratio of coconut to almond flour

Lovely, quick bread. It was too messy mixing it in the ramekin itself. I poured it out into a desert bowl, cooking it in the ramekin. It mushroomed in the ramekin. I cooked the second one in the desert bowl. The second one came out better, but I need to find the perfect container to cook the break, rectangular would be perfect. Awesome bread though..
I just made this recipe and it turned out great! I added a little bit of sea salt and oregano and then I toasted in the pan. I paired it with sunny side up egg and avocado and it was very filling. Will definitely do it again. Thanks for all the tips.

I rarely write reviews but had to on this one. Absolutely delicious! Had been doing Keto diet for a short time and seeing good results, but missed bread very much. This was so easy and turned out perfectly. It was delicious straight out of the toaster but I did sprinkle on some cinnamon and a bit of Stevia… Yum! It will definitely be a regular on my list of โallowableโ foods.

Is the nutrition value (1 bread) one slice or whole mug? When I calculate the ingredients myself I come up with a lot more so it would appear to be 1/2 mug (1 slice)? Wish I had realized it before eating it.
The nutritional value is for the entire mug (everything in the recipe) which can be sliced into 2-3 slices.

I added a teaspoon of vanilla extract and made a strawberry shortcake. AMAZING!!! Topped the bread off with strawberries and whipped cream. Who ever thought that would be keto.
I used 2T almond flour, 1t coconut flour, 1/2 t baking powder, 3T egg whites (Kirkland carton), 1T low fat butter, dash of salt. Followed same prep instructions. Nutrition: 149 cal, 3g carb, 11g fat and 7 gm protein, which works better for my low carb, low fat diet. It tasted great!
I made this recipe a couple days ago exactly as written and microwaved. I found it to be a perfectly acceptable replacement for bread. Texture was similar, I did not find the taste too eggy. My only problem was that I would have to make it too often. The next day I scaled it up (and added a pinch of salt) and baked it in the oven in a muffin top pan. The texture changed. It was closer to cornbread than bread, but not as crumbly. It was still acceptable, however my pan made the “breads” too small. I tried the recipe a 3rd time, but this time I used 4″ round aluminum pans about 2″ tall. Followed the recipe exactly, baked in the oven. This time, the result was exactly like cornbread. It was a pain to get of the pans, they were very crumbly, unsliceable, wouldn’t hold together to toast them. The difference between the 3 different pans and the 2 cooking methods was actually quite interesting.
I guess I will stick with the microwave method. It really was very close to bread.

Make this tloday and added sharp grated cheddar. I toasted it and used as a hamburger bun. I loved it. I used almond flour.
Made this tonight with a little tweak. Followed all ingredients except for the butter. I only put half tsp butter and added 1 tsp of Greek yogurt. It came out moist, cut it in half and browned it in the pan. It has an eggy smell to it but liked it very much. Next time Iโll try the egg whites and half n half recipe. Thank you
I have used the recipe many times and I have experimented with the fats. I have used olive oil, butter, and of all things mayo, by far the mayo has been my favorite. I know it sounds weird but try it!!! 1 tablespoon of mayo!

Coconut flour is extremely absorbent. Iโve been experimenting with keto breads, cakes and pizza doughs for about a year now and have almost all together stopped using coconut flour. If you prefer it over almond flour, try adding an extra egg or extra butter. A little bit of coconut flour absorbs a lot of liquid!! I found that a almond/ coconut flour works well, especially with cakes! Hope that helps ๐

At last a recipe for keto bread that is just right. i have previous attempts with other recipes that have not been successful. I used a little less baking powder as i always taste that usually in other recipes i have used. this time i didnt so was very happy.
Might I suggest you try an aluminum-free baking soda. It’s less likely to have that aftertaste. It’s also healthier.

I used cream of garter instead of baking powder and a 5ร7 glass dish so I’d get a regular bread depth. Then just lightly buttered a skillet and browned on both side. I top one with cheese, covered and melted for a delicious cuz topped toast. The other I topped with lemon curd and basically had a delicious lemon ‘donut’. I’ll use this recipe forever! So good!

I just made this exactly as written. It was great! I was so happy to find a quick bread recipe so that I could enjoy a sandwich. Note, I added some rosemary, garlic powder, and Himalayan salt to match my dinner.
If you use 2 egg whites instead of one whole egg it doesn’t taste eggy at all. May be a bit denser too which is great for bagels!
This recipe is a keto alternative to bread and is not 100% like bread but close enough!
How do you get rid of the egg smell
To reduce or eliminate the egg smell, beat the egg very well and add a few drops of lemon juice before adding the other ingredients.
I love it. The original recipe is good but I replaced the flour with Garbanzo flour and I think the flavor is even better! I make double recipes and use an extra large coffee mug and I get wonderful loafs that I use to make sandwiches. I also make yummy french toast using keto magic syrup. Left over bread lasts several days. This recipe has changed my life.

But Garbanzo flour isn’t keto friendly. It’s high-carb because it comes from legumes (garbanzo beans).
Love it, fried it in a little butter after taking out of microwave cut into 4 prices and ate with keto mongolian beef, had half for lunch and have half for dinner YUM!
This is probably the best 90 second bread recipe Iโve tried. I added a little more than 1/2 tsp baking powder (probably 3/4) and this is the first time I havenโt needed to make two portions for one sandwich. I didnโt find it to be overly eggy either. I cut it in half and toasted in a pan with butter before I made a sandwich.

I made these tonight..hubby and I LOVED THEM..kids liked them but thatโs a won for the kids lol..my son thought they tasted like eggs but i thought they were very bread-like. I used the almond flour option. Made them in small ramekins and cut them into three slices each.

If anyone wants to spruce things up a bit I suggest adding a tbsp of bacon bits and a tbsp of cheddar or any other shredded cheese you may enjoy. Just add it to the mix and proceed as always. Also, toasting the bread makes it more manageable if you use it to replace burger patties or bread to make sandwiches.

I just tried this. Not good by itself, smelled like egg, so I cut it in half & grilled both sides of each half as shown in video, topped each half with cheese & a fried egg. Was great for sopping up my egg yolk!

Great bun! I added 1/2 tsp ACV and 1 tsp psyllium husk. Made a nice tall bun. Cut in half, put a slice of chhese and a salami and some greens and yummy burger ready in minutes. I love to make this as lunch to take to office for my husband. He loves it. Thank you so much. Would try the coconut flour one I found in the comments.
Just made one with coconut flour too. Came out great as well. But I like the almond flour one taste wise. I added 1 TSP psyllium husk and 1/2 TSP ACV like I did with the almond flour bun. Gives a better rise. Baked in the oven for 12 minutes. Tastes great with butter and cheese.
These are the total carbs. For net carbs simply subtract the fiber and half the sugar. Enjoy ๐

I don’t really like the eggy taste so experimented. I used the egg white but used 1.5 tbsp of half and half instead of the yolk. I also added 2 more tbsp of the flour and it came out good. Not eggy at all and a little heavier like bread.

Great idea. I added 1/2 teaspoon of Jack Daniel’s Tennessee Honey (my stand in for vanilla extract) to add a little flavor. I made this in a 1-cup bowl and it looked like a muffin. I will try adding chopped walnuts or pecans and maybe add some blueberries next time. A 2-cup bowl made a better bread. Thanks for posting this.

Just made it both ways, w/ 3T almond vs. 1T coconut flour. They came out the same size (the c-nut flour expands while you’re mixing it). That one smelled slightly of coconut, but no objections.
They both tasted quite “eggy”, next time I might try the egg white with half and half substituted for the yoke eksewhere suggested in the comments. It might be fun to see how the recipe responds to a bit of yeast, too.
I’ve used this recipe several times but tonight I was feeling frisky so I added 1 packet of splenda, one drop of almond extract, I drop of vanilla extract and poured into a greased frying pan at medium heat. Flipped after 2 minutes and when golden brown on both sides it made a perfect pancake! Sweet and delicious. Omg! I want to make a stack! Amazing!

I made one this morning in the microwave. I had to cook it for almost 2 minutes in my microwave. I toasted it in unsalted butter on the stove. The only feedback that I can provide is that it was the consistency of cornbread. I believe the Almond Flour causes this. Otherwise I liked it. Maybe next time, I’ll add cheese. It’s really eggy and needs an additional flavor. I toasted in my toaster, buttered it and spread a thin layer of all fruit jam on it (keto be damned) and it was tasty. I might tried doubling the recipe except using just one egg, and see if that reduces the heavy egg flavor. If that works, I’ll try it x 3 with one egg. A perfectly fine bread substitute considering and plenty of room to tweak to taste. A hint of salt and splenda might nudge it in the direction of a burger bun or dinner roll. If I have any luck, I’ll report back. Thank you for sharing.
I tried this again with 1/2 an egg, 1 packet of Splenda, quarter tsp of cinnamon, and about a teaspoon of water. It was good. Less egg didn’t seem to hurt how the bread puffed up, but did help the egg flavor not compete with the other flavors. It could’ve used more sweetener and cinnamon, but I toasted in my toaster, buttered it, and ate it up! I’ll keep tweaking. It’s a very versatile, quick recipe!
Can I use regular baking powder, or does it HAVE to be double acting? I can’t find that locally, I would have to try and find it online. I find these are a lot more expensive when you purchase them online….

Can I quadruple (or more) this recipe ? That way I can make a big batch and freeze them. They are very good!
Can I use coconut flour as replacement to almond flour? What is the measurement if coconut flour is permissible?
Sure. You can replace it with a 4:1 ratio.
I recently made 4 lots of this creating variety by adding a teaspoon of different seeds, herbs to each batch such as sesame seeds, poppy seeds, hemp seeds and garlic herb seasoning.
Let them cool then stored in containers until the following day. I was then able to slice each ‘loaf’ into 5 thin slices – so 20 slices all up. I then dried them in a low temperature oven (100 degrees C) on wire racks so that air circulated all around. Takes about 1 hour but do keep an eye on them and rotate the racks as necessary.
Stored these ‘crispbreads’ in an airtight container – great for dips, pate, cream cheese, etc. or as an addition to a salad for texture and crunch.

So yummy! I added maple syrup(keto) and some vanilla and used it to make strawberry shortcake. So yummy. Delicious for a hamburger bun as well!!!
This was unexpectedly good! I used grass-fed butter, not oil. It cooks perfectly in 1 minute in my 1250 watt microwave. It came out like an English muffin which i split in half and toasted in a toaster. I’ve made it twice in the last 24 hours. First time, made it as written. Second time i added some salt because it needed something. Might try a little onion or garlic powder in it next time, maybe some herbs. Second one i used for Avocado toast. Very acceptable.
