The flavor was good but the texture was not – very stodgy and thick – not at all light and fluffy.
The consistency was ok, but wish I’d read the comments because it was indeed quite bland.
Sorry, this was gluggy and without taste! 🙁
What purpose does the banana (or its substitutes) serve in this recipe?
This was pretty good but a little bland. I would clarify for anyone who wants to prepare ahead: DO NOT prepare the entire batter the night before or you will end up with a dense product in the end. The chemical reaction between the baking powder and liquid ingredients helps the oats to rise. If you want to prepare this ahead of time, premix the dry ingredients and separately premix the wet ingredients. They can then be stored overnight (wet in the fridge, dry covered at room temperature) and mixed right before baking in order to still get the rise you desire.
Can’t wait to try but how would I double the recipe ?
I’m excited to try this recipe! My only confusion is that it is for 2 servings but if doubled it wod fit in a 9×13 pan. A 9×13 pan wod seem more then a 4 serving breakfast. Also wod the cook time be the same? Have you tried this with blueberries? That sounds delicious as well
I am wanting to know the same thing.
I made this last week by doubling and putting into 13×9 pan. It turned out well. I used a frozen banana and mixed with mixer instead of blender. I added nuts and choco chips. It was a hit so I’m making it again tonight to take to a potluck. I had some leftover last week that I ate cold and still enjoyed with my coffee for breakfast. 🙂
I make a 4 times batch and it barely fits in my Kitchen aid blender. It fits perfectly into a 9×13 pan. I bake it for 40-45 minutes
Just made this. I only used 1 tbs of honey. It is a very moist, thick, and banana bread like. Flavor is pretty good just not light enough for my taste. Very easy to make. I cooked in 4 large muffin tins.
It’s a great baked oatmeal. Thank you for sharing this recipe.
What can I use in place of ramekins? Loaf pan?
You can bake in any small oven-safe pan such as a loaf pan, small 8×8 pan, or any oven-safe dish.
I use the small pyrex clear blows with the red covers
For something that has no sugar no flour, this is definitely a good recipe. I added a few dates for extra sweetness.
Hi so this recipe can make 2 servings and the total calories for 2 servings is 349×2 right?
Correct! The calorie count is per serving 🙂
Holy cow! this is good…healthy and EASY. Tried it for the first time using some large mugs that were tempered. This was much better then any candy bar. ty for the recipe can’t wait to try an apple version 😀
So happy you enjoyed it, kimberly!
If substituting the Banana out for apple sauce, how much apple sauce would you recommend using?
Probably a half cup or a whole cup depending on how much u want, it will ofc make the batter more wet than it already is so no more than 1 cup
