What You Will Need to Make Stuffed Dates
Just 4 ingredients and 5 minutes are all that you need to make these stuffed dates ! Here’s what you need to make them:
- Dates: Use Medjool dates because they are larger, soft, and have a delicious caramel-like flavor.
- Mascarpone cheese: Stuff these with dates with mascarpone cheese for a perfect subtle creamy filling.
- Nuts: Any chopped nuts work, but we typically use chopped pistachios or walnuts. You can try almonds, cashews, or pecans too!
- Honey: The honey is optional but adds delicious flavor to the dates and presents well too!
How to make this recipe
- Slice each date along one side and remove the pit. You can find some dates already come pitted and cut!
- Fill each date with about 1 teaspoon of mascarpone cheese. You can add more or less to your likeness depending on how big the dates are.
- Garnish each date with a generous sprinkle of nuts. Press the nuts onto the cheese to make sure they stick. Lastly, drizzle with honey just before serving.

Variations
Stuffing: The mascarpone cheese is soft, spreadable cheese and is an ideal candidate for stuffing dates but can be easily replaced with your favorite spreadable cheese. Goat, ricotta, blue cheese, cream cheese, or even boursin cheese are great alternatives!
Toppings: I used chopped pistachios and walnuts + pomegranates to top the dates but you can use your favorite toppings! You can also top them with whole nuts, shredded coconut or chocolate, chives, or a drizzle of your favorite nut butter.

Ingredients
- 10-12 medjool dates pitted
- 1/4 cup Mascarpone cheese
- ¼ cup chopped nuts of choice, I use pistachio and/or walnuts
- ¼ cup pomegranate seeds
- 2 tablespoons honey, optional
