Healthy Avocado Chicken Salad

Ever since I tried avocado in a grilled chicken sandwich, I can no longer have chicken without avocado. The creamy avocado compliments chicken so well and the addition of cilantro and lime make it a combo to die for. This creamy salad is great in sandwiches, wraps, or with a side of vegetables if you are on a diet.

Healthy Avocado Chicken Salad

I’ve added this salad to my healthy lunch rotation because the rotisserie chicken breasts are lean and a great source of protein, the avocado is packed full of nutrition and because no mayo or cream is added, you can enjoy the salad guilt-free.

Making this fresh and flavorful salad is as simple as combining avocado, shredded chicken, roasted corn and red onion. You can also add minced green onion, tomatoes, cucumber, or diced bacon. For the herbs, we used cilantro but dill or parsley also work very well too!

Avocado Chicken Salad

Ingredients 

  • 2 medium cooked chicken breasts, shredded or chopped (we used rotisserie chicken)
  • 2 ripe avocados, pitted and diced
  • 1/2 cup corn, roasted, canned, or frozen
  • 1/4 cup red or green onion, minced
  • 2 tablespoons cilantro, minced (or parsley or dill)
  • 2 tablespoons lime, or lemon juice
  • 2 tablespoons olive oil
  • salt and pepper to taste

Instructions 

  • In a large bowl, add the shredded chicken, avocado, onion, avocados, corn, and cilantro.

  • Drizzle with the lime (or lemon) juice, olive oil and season with salt and pepper. Toss gently until all the Ingredients are combined.

  1. This was DELICIOUS and so easy to make! We had leftover rotisserie chicken and some avocados and I’m so glad I stumbled upon this recipe.

    We aren’t huge red onion fans so I opted for a small bit of chopped green onion. As others have stated, I really loved that this used lime juice rather than Mayo. It made it lighter, healthier, and tastier in my opinion. I added a chopped cucumber, 2 diced jalapeños, cumin & garlic powders to taste, and doubled the amount of cilantro & parsley.

    So yummy! We ate this straight out of the mixing bowl with tortilla chips this time, but I look forward to trying this on pita bread in the future!

  3. this is one of my favorite go to recipes for a healthy lunch. I’m wondering if I can freeze it because I just made a huge batch and would like to be able to eat it throughout the week or grab it out when I haven’t meal prepped. has anybody had any luck freezing?

  5. HUGE success, and extremely easy. I made it so that I wouldn’t have to cook in these 118 degree Palm Spring days (I used leftover chicken). I followed the recipe pretty much, although I jacked the ingredients up a bit (2 tablespoons of cilantro? Not in MY house… closer to half a cup.), chilled it, and my wife dined on chicken salad and my son on cold corn tortilla tacos (I actually don’t eat chicken salad). It was so good and so easy that I’m making it again today for weekend snacking. The one deviation I made to the recipe was added a skosh of McCormick Salad Supreme seasoning… my wife thinks that Salad Supreme, like Windex, fixes everything.

    1. I use canned chicken, and love it. That makes it quicker – just make sure you separate the chicken into flakes when you take it out of the can.
