Instructions 

  • Heat 2 tablespoons olive oil in a large saucepan over medium-high heat. Add the chopped chicken breasts, season with Italian seasoning, crushed red pepper, and salt & pepper. Sautee for 4-5 minutes or until chicken is golden and cooked through. 
  • Add the garlic and saute for another minute or until fragrant. Add the tomato, broccoli, spinach, shredded cheese, and cream cheese. Cook for another 3-4 minutes or until the broccoli is cooked through.
  • Serve with cooked pasta, rice, zucchini noodles or cauliflower rice

  3. Really good! It’s not the recipe in the picture though. I added sun dried tomatoes, mushrooms and I had to add some chicken broth as the cream cheese just didnt cut it alone. I will definitely make this again!

  4. can you use frozen broccoli or do you need to use fresh?

    1. Frozen broccoli is just fine. Before you start cooking everything, put the frozen broccoli in a strainer and run hot water over it until the ice is gone. Then just add it in when the recipe calls for it.

  5. This was really good! It was very easy. This is so customizable; you can add any vegetables you want if you to add bulk without adding heavy carbs. It will definitely be in our weekly dinner rotation if not more often.

  6. I added 8oz of bacon to this. Cut into half inch squares. Cook it up, remove it, and then cook the chicken in the bacon fat and more oil.
    Add the bacon back after the broccoli phase.
    If you’re going to put it over rice then I would suggest adding a bit more oil or a little bit of heavy cream (preferred because it tastes better) at the end.

    1. To make this low sodium try using half the salt or use a salt substitute. As for not using spinich, extra broccoli will work. I’m not sure about cauliflower the only thing I can tell you try it see if you like it. Share what you discover. Hope this helps you.

I followed the recipe but doubled it because of our family size and I don’t even like Italian seasoning that much, and I had Parmesan and cheddar cheese so I used that…The smell was amazing and I knew it would be good. Also, my hubby and I were a little tired of zucchini noodles and cauliflower rice…but I did have zucchini and yellow squash and I cut those into slices and baked them for 12 minutes and just used that as a base OMG it was the most delish thing I have had in a while! It was so pretty my husband said it looked like it came from a 5 star restaurant. I will be making this a few times a month. AND it was super easy and fun to make!

      1. Iโ€™m pretty sure the photo is NOT this recipe. Anywho, I made some changes to the seasonings and veggies (only broccoliโ€”doubled). The sauce was missing something, so I added about a half tsp. of Better than Bouillon chicken base, which was a great choice.

        I was nervous about the sauce, but it came together as the veggies sweat! The broccoli takes way longer than 3 minutes, so when the cheese started browning and sticking to the pan, I gave it a stir, turned the heat off and let it sit covered for about 10 minutes. The brown bits released from the bottom as it sat and added great flavor to the sauce and the broccoli was perfectly cooked and coated!
